I adapted this recipe from one I found in an old slow-cooker book of my grandma's. I serve it with macaroni and cheese and pinto beans. -Kelly Ritter, Douglasville, Georgia

Categories     < 60 Mins

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 (1 lb) can salmon, flaked (I use one large can and one small can)
2 eggs, slightly beaten
1/2 cup milk
1/2 cup buttered bread crumb
1 teaspoon lemon juice
1/2 teaspoon salt
1 dash pepper
1 small chopped onion
1 tablespoon chopped parsley or 1 tablespoon green pepper
1 tablespoon melted butter
1/2 teaspoon sage (optional)
Ritz cracker, crushed
butter, melted

Steps:

  • Combine ingredients in order given.
  • Pack firmly in buttered loaf pan and bake in a 350 degree oven for 30-40 minutes.
  • For topping: Mix enough butter in with the Ritz crackers to moisten.
  • Sprinkle generously on top of casserole.

Tips:

  • Choose the Right Salmon: Opt for fresh or frozen salmon fillets that are free of bones and skin. If using frozen salmon, thaw it completely before preparing the loaf.
  • Don't Overmix: Overmixing the salmon mixture can result in a tough and dense loaf. Mix just until the ingredients are well combined.
  • Use a Loaf Pan: A standard loaf pan is the ideal baking vessel for salmon loaf. It provides the right shape and size for even cooking.
  • Bake at the Right Temperature: The optimal baking temperature for salmon loaf is 350°F (175°C). This temperature ensures that the loaf cooks evenly without drying out.
  • Check for Doneness: Insert a toothpick or skewer into the center of the loaf. If it comes out clean, the loaf is done. If not, continue baking for a few more minutes.
