Apple tart is my family's favorite dessert. I love it because it makes the house smell amazing and the tart looks so polished and beautiful (taking a few extra minutes to fan out the apples makes it look like it came from a bakery!). This is a French-style apple tart, not an apple pie, meaning a wedge of the tart is thinner and neater than a slice of all-American apple pie. Try it topped with ice cream for that delicious a la mode taste. Rolling the dough for the tart makes for a finer-textured crust, but on many occasions I have simply pressed the crust into place with great results.

1 stick unsalted butter, cut into1-inch cubes, plus 1 tablespoon, melted
11/2 cups all-purpose flour, plus extra for rolling
1/4 teaspoon kosher salt
2 tablespoons sugar
3 Granny Smith apples
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon

Steps:

  • Set the cubed butter on a plate and place it in the freezer for 15 minutes. Fill a cup with ice and water and set aside. Place 1 1/2 of the flour, 1 8 teaspoon of the salt, and 1 tablespoon of the sugar in the bowl of a food processor and pulse to combine. Take the butter out of the freezer and add it to the flour. Pulse the mixture until it looks like wet sand, about 10 seconds. Add 2 to 3 tablespoons of the ice water and pulse until the dough comes together into a ball.
  • Lightly flour your work surface and place the dough on top. Then lightly flour the top of the dough and roll to about a 10- to 11-inch circle, sprinkling more flour under and on top of the dough as necessary. Gently drape the dough over the rolling pin and transfer it to a 9- or 9 1/2-inch fluted tart pan (ideally one with a removable bottom). Fit the dough into the bottom and up the sides of the pan as evenly as possible and press off excess dough from the fluted rim. Set the tart pan on a baking sheet and place in the refrigerator for 15 minutes.
  • Preheat the oven to 350degreesF. Peel, core, and quarter the apples and then thinly slice them lengthwise. Place the apples in a large bowl and toss with the lemon juice, the cinnamon, and the remaining 1 tablespoon sugar and 1 8 teaspoon salt. Remove the baking sheet with the tart shell from the refrigerator. Arrange the apples in concentric circles so they overlap slightly. Brush the edges of the crust with the melted butter and then bake until the edges are golden and the apples have cooked down, about 1 hour. Cool for 15 minutes before slicing and serving.

  • Preheat the oven to 425 degrees F.

1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch cake pan.
  • Combine flour, butter, 1 1/2 egg, 1/3 cup plus 1 tablespoon sugar, and 1 teaspoon cinnamon in a large bowl. Knead by hand to form a smooth, consistent dough.

1 cup all-purpose flour
5 tablespoons butter, softened
1/8 teaspoon salt
6 tablespoons sugar, divided
2 tablespoons water, plus
1/4 cup water
1/4 cup water
6 medium golden delicious apples (3 pounds)
1 teaspoon lemon juice
1 (10 ounce) jar apricot preserves

Steps:

  • Prepare pastry:.
  • In medium bowl with fingertips, quickly knead flour, butter, salt, 2 tablespoons sugar, and 2 tablespoons water until dough forms a ball, adding more water if necessary 1 teaspoon at a time.
  • Pat pastry into bottom and up side of a 9-inch tart pan with a removable bottom; refrigerate.
  • Peel, quarter, and core 3 apples and cut into even 1/8 inch slices to make about 3 cups.
  • In a medium bowl, toss apple slices with lemon juice and 2 tablespoons sugar.
  • Peel and core remaining apples; cut into chunks.
  • In blender or food processor, combine 1/4 cup water with about 1/3 of the apple chunks.

  • Spoon into a 3 quart saucepan; stir in 1/3 cup apricot preserves and 2 tablespoons sugar.
  • Over high heat, heat to boiling.
  • Reduce heat to medium-high; cook, uncovered, about 20 minutes or until very thick. There should be about 1 1/2 cups applesauce.
  • Preheat oven to 400 degrees.
  • Spread applesauce evenly over pastry.
  • Arrange reserved apple slices, closely overlapping, to form concentric circles around pie.
  • Bake for 45 minutes or until apples slices are tender and lightly browned.
  • Remove pie to wire rack.
  • Strain remaining apricot preserves through a sieve into a small saucepan.
  • Over medium-high heat, heat to boiling.
  • Continue cooking about 2 minutes longer or until mixture is thick enough to coat a spoon.
  • Brush mixture evenly over top of tart.

6 medium sweet-tart apples (such as Pink Lady, Honeycrisp, or Winesap)
1 lemon, halved
1/2 cup pure maple syrup
1/4 cup brandy, preferably apple
2 tsp. vanilla extract
Pinch of kosher salt
2 Tbsp. raw sugar, divided
1 Tbsp. all-purpose flour, plus more for dusting
1 large egg, beaten to blend
Shortcut Puff Pastry
Vanilla ice cream (for serving)

Steps:

  • Place a rack in middle of oven; preheat to 350°F. Toast almonds on a rimmed baking sheet, tossing once, until golden brown, 6-8 minutes. Let cool.
  • Reduce oven temperature to 275°F. Peel apples; cut in half. Using a melon baller or teaspoon, scoop out cores. Rub cut sides of lemon all over apples, then place apples cut side down in a 13x9" baking dish. Squeeze lemon halves over and add maple syrup, brandy, vanilla, and salt. Cover tightly with foil and bake until juices are bubbling and apples are tender but still intact (poke through foil with a tester or toothpick to check), 60-80 minutes. Uncover and let cool. Increase oven temperature to 400°F.
  • Meanwhile, toss almonds, 1 Tbsp. raw sugar, and 1 Tbsp. flour in a small bowl; set aside. Let puff pastry sit at room temperature about 4 minutes to soften slightly. Roll out on a lightly floured sheet of parchment paper, dusting with more flour as needed to prevent sticking and rotating once or twice, to a 16x12" rectangle. Slide parchment paper with pastry onto a large rimmed baking sheet. Trim around sides to straighten and tidy edges, then cut off a 1" strip from each side (you'll have 4 strips). Brush around edge of rectangle with egg, then place strips on top, aligning with edges. Trim any overhang from corners. Brush rim you just created with egg and sprinkle with remaining 1 Tbsp. raw sugar. Scatter reserved almond mixture over pastry, staying inside the rim.
  • Gently arrange apples on top of almond mixture; reserve juices left in dish. Chill tart 15 minutes.
  • Bake tart 20 minutes. Reduce oven temperature to 350°F and continue to bake until pastry is deep golden brown and puffed, 45-55 minutes.
  • Meanwhile, scrape reserved apple juices into a small saucepan and cook over medium heat, swirling pan often, until syrupy (you should have 2-4 Tbsp.), 6-8 minutes. Remove glaze from heat.
  • Remove tart from oven and brush glaze over apples. Serve warm or room temperature with scoops of ice cream.

  • Tart can be baked 10 hours ahead. Store loosely wrapped at room temperature. Reheat in a 250°F oven if desired.

4 - 5 Golden Delicious apples
1/4 cup sugar
1/4 cup butter
1/2 cup peach preserves
2 tablespoons water
2 tablespoons apricot brandy

  • Crust: Combine flour, baking powder, and salt; cut in butter and shortening with pastry blender until mixture resembles coarse meal. Sprinkle milk over surface; stir with a fork until ingredients are moistened. Shape into a ball; chill at least an hour. Roll dough to 1/8-inch thickness on a lightly floured surface. Fit pastry into an 11x17x1/2-inch tart pan or an 11-inch round tart pan with a removable bottom. Set aside. Almond Mixture: Position knife blade in food processor bowl. Add almonds; process until finely ground. Add sugar, egg and butter; process until well mixed. Spread mixture evenly over the bottom of the pastry; set aside. Filling: Combine water and lemon juice. Peel and core apples; cut into 1/4-inch-thick slices. Dip apples in lemon juice mixture; drain well. Arrange apples so slices are overlapping on top of Almond Mixture. Sprinkle with sugar and cinnamon. Dot with butter. Bake at 400° approximately 1 hour. Combine peach preserves and water; cook over low heat, stirring constantly, until melted. Press through a sieve; add the brandy. After removing tart from oven, carefully brush syrup over tart. Cool. Remove rim of pan before serving.
