MAPLE BACON DEVILED EGGS

Maple Bacon Deviled Eggs image

Provided by Katie Lee Biegel

Categories     appetizer

Time 1h35m

Yield 24 deviled eggs

Number Of Ingredients 13

Nonstick cooking spray, for the rack
4 pieces thick-cut bacon
1/4 cup maple syrup
1 tablespoon light brown sugar
1/2 teaspoon paprika
1/2 teaspoon cayenne powder, optional
12 large eggs
1 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon maple syrup
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • For the bacon: Preheat the oven to 375 degrees F.
  • Line a baking sheet with parchment paper and fit with a cooling rack. Spray the cooling rack with nonstick spray. Lay the bacon out on the rack in an even layer. Mix the syrup, sugar, paprika and cayenne, if using, in a small bowl. Brush on both sides of the bacon. Bake until golden but still pliable, about 15 minutes, then flip and bake until darker and crisp, another 15 minutes. (The bacon will continue to crisp as it rests.) Remove to a plate and allow to cool completely in a single layer. Chop and set aside.
  • For the eggs: Fill a large saucepan with water and bring to a boil. With a ladle, slowly lower the eggs into the water, one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain. When the eggs are cool enough to handle, remove the shells.
  • Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites cut-side up on a serving platter. Process the yolks until it looks sandy. Add the mayo, Dijon, maple syrup, salt and pepper. Process until well blended and very smooth, about 1 minute, then transfer to a resealable plastic bag or piping bag. If using a resealable bag, use scissors to snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the yolk mixture into the egg whites. Sprinkle with the bacon and chives. Cover loosely and chill until ready to serve.

DEVILED EGGS WITH CHIVES

Deviled Eggs With Chives image

Make and share this Deviled Eggs With Chives recipe from Food.com.

Provided by Chef mariajane

Categories     < 15 Mins

Time 10m

Yield 4 serving(s)

Number Of Ingredients 6

4 large eggs
1 tablespoon mayonnaise, style dressing
3 tablespoons sun-dried tomatoes packed in oil, finely chopped
3 tablespoons sliced green olives, finely chopped
3 tablespoons fresh chives, finely chopped plus more for garnish
1/4 teaspoon cayenne pepper

Steps:

  • Place eggs in large saucepan. Add enough cold water to cover by 1-inch. Cover the pan and bring just to a boil. Remove pan from heat and let eggs stand, covered, for 10 minutes.
  • Remove eggs to bowl of cold water and let cool, about 15 minutes. Peel eggs, cut in half lengthwise and remove the yolks to a bowl. Set aside the whites.
  • Use a fork to mash the yolks with the remaining ingredients. Mound the yolk mixture back into the hollow of the egg whites, spooning about 1 tablespoons in each half-egg. Sprinkle with reserved chives and serve.

Tips and Conclusion

  1. Choose fresh and large eggs: Use large, fresh eggs for the best texture and flavor. For easier peeling, choose eggs that are at least one week old.
  2. Cook the eggs perfectly: To prevent overcooking, place the eggs in a pot of cold water, bring them to a boil, then cover them and remove them from the heat. Let the eggs stand in the hot water for 10-12 minutes for hard-boiled eggs or 6-8 minutes for soft-boiled eggs.
  3. Prepare the eggs in advance: You can prepare the hard-boiled eggs up to 4 days in advance. Peel and halve the eggs, then cover them tightly with plastic wrap and refrigerate.
  4. Mash the yolks smoothly: Use a fork or a potato masher to mash the egg yolks until they are smooth and creamy.
  5. Use high-quality mayonnaise: For the best flavor, use a high-quality mayonnaise made with real eggs and oil.
  6. Season the deviled eggs generously: Season the deviled egg mixture with salt, pepper, and your favorite herbs and spices. Don't be afraid to experiment with different flavors.
  7. Chill the deviled eggs before serving: Chill the deviled eggs for at least 30 minutes before serving to allow the flavors to meld and the filling to firm up.
  8. Garnish the deviled eggs creatively: Garnish the deviled eggs with a variety of toppings, such as crumbled bacon, chopped chives, paprika, or grated cheese.

Conclusion

Deviled eggs are a classic appetizer that is perfect for any occasion, including potlucks, picnics, and holiday parties. They are easy to make and can be customized to your liking. With a little creativity, you can create deviled eggs that are both delicious and visually appealing. Get creative and have fun with your deviled egg recipes!
