Steps:

  • Cook Pasta according to package directions, meanwhile, in a blender, blend Garlic, 1 lg can black olives with some juice (keep remaining juice) and some black pepper and parmesan cheese untill well blended
  • Drain pasta and in a large bowl combine all the blended mixture, mix well, add more Olive juice as needed for moisture, can be served Hot or cold but is best a little warmed up, She's not pretty (hence the name) but very yummy!

8 slices bacon, diced
1 tablespoon unsalted butter
1 small yellow onion, finely diced
1 1/2 cups half-and-half
1/3 cup Pecorino Romano cheese, freshly grated
1 pound gemelli or fusili pasta
1/3 cup Parmigiano, freshly grated
1/4 cup fresh flat-leaf parsley, minced
Sea salt
Freshly ground pepper

Steps:

  • For the sauce: Whisk the eggs in a large bowl. Fry the bacon in a large frying pan over medium heat until crisp and golden, and then remove and drain on a paper towel. Leave all but 1 tablespoon of the bacon fat in the pan and add the butter. Return the pan to the burner and cook the onions until slightly golden, 2 to 3 minutes. Lower the heat to medium-low and add the half-and-half and cheese. Simmer until the sauce has thickened slightly, about 5 minutes; do not let boil. Let the sauce cool slightly, about 2 minutes. For the pasta: Boil the pasta in salted water until al dente. Slowly pour the cream sauce into the eggs while continuously whisking. Add the hot pasta and toss quickly. The hot pasta will complete the cooking of the eggs. Add the bacon and parsley and toss again. Season with salt and pepper and serve hot.

1 (13 ounce) box dreamfield's rotini pasta, cooked
1 large onion, chopped
1 green pepper, chopped
1 1/2 cups diced celery
6 garlic cloves, minced
8 ounces lean ground beef
7 ounces smoked sausage, chopped
10 ounces chicken livers
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 tablespoon instant chicken bouillon
1 tablespoon cajun spices
1 tablespoon paprika
1 tablespoon louisiana hot pepper sauce
1 tablespoon soy sauce
15 ounces tomato sauce
1/3 cup dry red wine
1/2 cup half-and-half
1/4 cup grated parmesan cheese

Steps:

  • Cook pasta and drain;set aside.
  • Saute chicken livers in olive oil until cooked through; allow to cool and mince.
