This is a great tasting loaf, fruity and nutty at the same time.

2 eggs
½ cup melted butter
1 cup white sugar
1 cup crushed pineapple with juice
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Beat eggs slightly. Add butter and sugar. Beat smooth. Stir in pineapple and vanilla.
  • In separate bowl put flour, baking powder, soda, salt, and walnuts. Stir well and pour into pineapple mixture. Stir to moisten. Pour into greased 9x5x3 inch loaf pan.
  • Bake in 350 degree F (175 degree C) oven for 1 hour. Test with toothpick. Let stand 10 minutes. Remove from pan. Cool and wrap.

1 (8 ounce) can pineapple chunks
2 ¾ cups self-rising flour
⅓ cup white sugar
1 (12 fluid ounce) can or bottle beer

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch baking pan.
  • Combine the pineapple flour, sugar and beer. Do not overmix! Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for about 1 hour or until bread tests done.

1 3/4 cups water
1 egg yolk
2 tablespoons shortening
4 1/2 cups hi-gluten flour
1/2 teaspoon salt
1/3 cup sugar
1 tablespoon instant yeast
1 cup crushed pineapple
1 cup unsweetened coconut
1 cup sugar
2 tablespoons cornstarch

Steps:

  • Combine pineapple and coconut in bowl.
  • Combine sugar and cornstarch in separate bowl and mix well.
  • Add sugar and cornstarch mixture into pineapple and coconut mixture and mix well.
  • Refrigerate for 1 hour.
  • Combine all ingredients in order of recipe in mixing bowl, and mix with dough hook until dough picks up on hook and the sides of the mixing bowl is clean.
  • Let dough rise until it doubles in size.
  • Roll out dough onto a floured surface until it is 2 inches thick.
  • Next spread pineapple/coconut mixture over the top of the dough.
  • Fold dough into itself and place in a greased 9x13-inch cake pan.
  • Cut dough into pieces with a pizza cutter and spread out cut pieces evenly in cake pan.
  • Let dough rise in warm oven (110°F) - about half way up the pan.
  • Bake at 325°F for 20-25 minutes or until golden brown.
  • Let bread cool, cut and serve.

3 eggs, beaten
1/2 teaspoon cinnamon
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup walnuts or 1 cup pecans

Steps:

  • Beat eggs, sugar and oil.
  • Add sifted flour, baking soda, baking powder and cinnamon.
  • Mix in pineapple and walnuts or pecans.
  • Pour into 2 loaf pans.
  • Bake at 325 degrees for 50-60 minutes.
