Time 1h5m

Yield 14 manicottis, 7 serving(s)

Number Of Ingredients 19

1 lb part-skim ricotta cheese
8 ounces shredded mozzarella cheese, divided
3 tablespoons shredded parmesan cheese
1 teaspoon sugar
1 egg, slightly beaten
2 -3 dashes nutmeg
1 tablespoon dried parsley
3 dashes ground black pepper
14 manicotti, uncooked
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
3/4 cup water
1 tablespoon onion flakes
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon dried oregano
1 teaspoon sugar
3 dashes salt
3 dashes ground black pepper

Steps:

  • Preheat oven to 400°F.
  • Combine Ricotta, 4 oz Mozzarella, Parmesan, 1 tsp sugar, egg, nutmeg, parsley, salt and pepper.
  • Stuff uncooked manicotti generously with cheese mixture, from both ends. (Tip: I put mixture in a plastic bag and cut off a small corner to squeeze the mixture in the shells easily).
  • Arrange manicotti in a single layer in a slightly greased 13 x 9 inch baking dish.
  • Combine diced tomatoes, tomato paste, water, onion flakes, basil, rosemary, oregano, sugar, salt and pepper in a small or medium sauce pan and bring to just a boil.
  • Pour sauce over manicotti covering completely.
  • Cover baking dish with aluminum foil, crimping edges to seal tightly.
  • Bake for 40 minutes at 400°F.
  • Remove foil, sprinkle generously with remaining mozzarella.
  • Bake uncovered for 5 minutes or until cheese is melted.

Tips:

  • Selecting the Right Manicotti Shells: Choose large manicotti shells to hold a generous filling and ensure they are pliable enough to roll without cracking.
  • Soaking the Manicotti Shells: Soak the manicotti shells in warm water for about 30 minutes before filling them. This will make them easier to roll and prevent them from cracking.
  • Preparing the Filling: Use a combination of ricotta cheese, grated Parmesan cheese, ground beef, Italian sausage, and spinach for a classic manicotti filling. Season the filling generously with Italian herbs and spices for a flavorful dish.
  • Filling the Manicotti Shells: Place a spoonful of the filling into each manicotti shell and spread it evenly, leaving a small border around the edges. Avoid overfilling the shells to prevent them from bursting during baking.
  • Rolling the Manicotti Shells: Carefully roll each filled manicotti shell into a tight cylinder, starting from one end and rolling it towards the other. Ensure the filling is evenly distributed throughout the shell.
  • Baking the Manicotti: Arrange the filled manicotti rolls in a baking dish and top them with a flavorful tomato sauce. Sprinkle grated Parmesan cheese over the top and bake in a preheated oven until the manicotti are cooked through and the cheese is melted and golden brown.
  • Serving the Manicotti: Let the manicotti rest for a few minutes before serving to allow the filling to set. Serve them with additional tomato sauce, grated Parmesan cheese, and a side of garlic bread for a complete and satisfying meal.
