CHICKEN BACON RANCH LASAGNA

1/4 cup butter
1/4 cup Gold Medal™ all-purpose flour
2 cups Progresso™ reduced sodium chicken broth (from 32-oz carton)
1/2 cup heavy whipping cream
1 package (8 oz) cream cheese, cubed
1 package (1 oz) ranch salad dressing & seasoning mix
9 uncooked oven-ready lasagna noodles
3 cups chopped deli rotisserie chicken (from 2-lb chicken)
8 slices bacon, crisply cooked, crumbled (1/2 cup)
1/2 cup chopped green onions (about 6 green onions)
3 cups shredded Cheddar-Monterey Jack cheese (12 oz)
Bottled ranch dressing, if desired

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. With whisk, stir in flour until smooth. Cook and stir 1 to 2 minutes or until mixture is smooth and bubbly.
  • In 4-cup glass measuring cup, mix broth and whipping cream. Gradually stir broth mixture into saucepan. Increase heat to medium-high; heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat to medium. Stir in cream cheese. Cook until melted, stirring occasionally. Remove from heat. Stir in dressing mix.
  • Spread 1/2 cup of the sauce in bottom of baking dish; top with a layer of 3 noodles. On top of noodles, spoon half of the chicken, one-third of the bacon, 3 tablespoons of the green onions, 1 cup of the Cheddar-Monterey Jack cheese and 1 cup of the sauce. Repeat, starting with noodles. Top with remaining noodles, sauce, cheese and bacon.
  • Bake uncovered 30 to 40 minutes or until noodles are tender and edges are bubbly. Let stand uncovered 10 minutes, and top with remaining green onions. Serve with ranch dressing.

1 medium onion, chopped (1 cup)
1 medium red bell pepper, chopped
1 serrano chile, seeded and finely chopped
1/4 cup Gold Medal™ all-purpose flour
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
4 cups milk
8 oz Kraft™ Velveeta™ original cheese, cut into cubes
3 cups shredded Cheddar cheese (12 oz)
3 cups shredded deli rotisserie chicken
1 can (4.5 oz) Old El Paso™ chopped green chiles
12 oven-ready lasagna noodles
1 cup finely crushed tortilla chips
Chopped green onions, if desired

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) baking dish with cooking spray.
  • In 3-quart saucepan, melt butter over medium heat. Stir in onion, bell pepper and serrano chile; cook about 6 minutes or until vegetables are softened. Stir in flour and taco seasoning mix; cook 1 minute, stirring constantly. Gradually beat in milk with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; beat in Kraft™ Velveeta™ cheese and 2 cups of the Cheddar cheese with whisk until melted. Reserve 3/4 cup of the sauce.
  • To remaining sauce, add chicken and green chiles.
  • Spread reserved 3/4 cup sauce in baking dish. Top with 3 noodles. Spread 2 1/4 cups of the chicken mixture over noodles. Repeat 3 more times. Sprinkle remaining 1 cup Cheddar cheese over top of chicken mixture. Cover with foil; bake 20 minutes.
  • Remove foil; sprinkle with tortilla chips. Bake 20 to 25 minutes longer or until bubbly and hot in center. Top with green onions. Let stand 15 minutes before cutting.

2 tablespoons salted butter
2 medium carrots, cut into matchsticks
1 medium onion, diced
1 clove garlic, minced
1 small head broccoli, cut into florets
½ cup chicken broth
1 rotisserie chicken
4 tablespoons salted butter
4 tablespoons all-purpose flour
3 cups 1% milk
1 cup shredded white Cheddar cheese
2 teaspoons garlic salt
2 cups shredded Cheddar cheese
1 (8 ounce) package oven-ready lasagna noodles
3 tablespoons panko bread crumbs

Steps:

  • Melt butter in a large skillet over medium-high heat. Saute carrots and onion for about 4 minutes. Add garlic during the last few seconds so that it becomes fragrant but does not burn.
  • Combine broccoli and chicken broth in a microwave-safe bowl. Steam in the microwave until tender, about 3 minutes. Drain off chicken broth. Coarsely chop the florets and add to the carrot mixture. Stir to combine and set aside.
  • Remove skin from the rotisserie chicken. Using a sharp knife, carefully separate pieces. Cut meat into small cubes, making sure to pick through and discard any bones.

2 ½ cups heavy cream
½ teaspoon black pepper
¾ cup grated parmesan cheese
9 lasagna noodles, cooked
1 rotisserie chicken, shredded
2 cups broccoli, chopped
2 cups mozzarella cheese

Steps:

  • Preheat oven to 375˚F (190˚C).
