8 slices bread
4 slices (1 ounce each) Cheddar cheese
4 slices (1 ounce each) Monterey Jack or mozzarella cheese

Steps:

  • Spread butter evenly on one side of each slice of bread.
  • Place 4 slices of bread, buttered sides down, in 12-inch skillet. Top each with 1 slice of Cheddar cheese and 1 slice of Monterey Jack cheese. Top with remaining bread, buttered sides up.
  • Cook uncovered over medium heat about 5 minutes or until bottoms of sandwiches are golden brown; turn. Cook 2 to 3 minutes longer or until bottoms are golden brown and cheese is melted.

4 (1/4-inch-thick) slices red onion
4 (3/4-oz.) slices Cheddar cheese
4 (3/4-oz.) slices mozzarella cheese
8 (1/2-inch-thick) slices sourdough or Vienna bread

Steps:

  • Heat closed contact grill for 5 minutes.
  • When grill is heated, place bacon on bottom grill surface. (If necessary, cook 4 slices at a time.) Close grill; cook 3 to 4 minutes or until browned. Remove bacon from grill; drain on paper towels. Cut bacon slices in half crosswise.
  • With rubber scraper, carefully scrape most of drippings from grill into drip tray. Add onion to grill. Close grill; cook 4 to 6 minutes or until tender.
  • To make sandwiches, layer Cheddar cheese, cooked bacon, onion and mozzarella cheese between bread slices. Place 2 sandwiches on bottom grill surface. Close grill; cook 3 to 5 minutes or until bread is toasted and cheese is melted. Repeat with remaining sandwiches.

1/4 cup butter, softened
1 large egg
1/2 teaspoon garlic salt

6 thin slices challah bread
7 ounces brie cheese, sliced, rind removed
4 fresh figs, sliced
6 ounces monterey jack cheese, sliced
1/2 cup fig preserves

  • Preheat the oven to 350 degrees F. Melt 3 tablespoons butter with 1 teaspoon truffle oil in an ovenproof skillet over medium heat. Add 2 slices bread, and toast on both sides. Set the toast aside and reserve the skillet.
