Steps:
- Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
- Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
DRESSED UP, SLOW COOKED CANNED BAKED BEANS
My sister turned me on to this wonderful way to dress up canned baked or barbeque beans (and she nabbed it from our cousin). They are delightful, and such an easy way to make canned taste homemade. I love to serve these with barbequed meat, and either cold slaw or potatoe salad. This recipe can easily be adjusted to serve the number of people in your party. You can also add more or less brown sugar, depending on how much sweetness you prefer.

Tips:
- Use dried beans: Dried beans are more flavorful and economical than canned beans. Just be sure to soak them overnight before cooking.
- Add aromatics: Aromatics like onion, garlic, and celery add depth of flavor to baked beans. Sauté them in a little oil before adding the beans.
- Use a variety of beans: Don't just stick to one type of bean. Try using a mix of different beans, such as kidney beans, black beans, and pinto beans.
- Add meat or vegetables: Baked beans are a great way to use up leftover meat or vegetables. Just add them to the pot along with the beans.
- Experiment with different sauces: There are many different sauces that you can use to flavor baked beans. Try using a barbecue sauce, a tomato sauce, or even a mustard sauce.
- Cook on low heat: Baked beans should be cooked on low heat for several hours. This allows the flavors to develop and the beans to become tender.
Conclusion:
Baked beans are a classic comfort food that can be enjoyed by people of all ages. With a few simple tips, you can make baked beans that are even better than the ones you get at the diner. So next time you're looking for a hearty and flavorful meal, give baked beans a try.
