Buttermilk Cranberry Muffins image

I've been making these muffins and this cranberry butter for years, and I have never met anyone who didn't like them. I'll usually buy several bags of fresh cranberries when they're available and freeze them to use throughout the year. I've also discovered that powdered buttermilk works well. -Jane Yunker, Rochester, New York

CRANBERRY BRAN MUFFINS

Cranberry Bran Muffins image

These are so easy and quick, you can bake them on a whim -- whenever you have a craving but not a lot of time. Orange zest and buttermilk give this recipe extra-special tang.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 50m

Yield Makes 1 dozen

Number Of Ingredients 12

2 cups all-purpose flour
1 1/2 cups wheat bran
1 1/2 teaspoons baking powder
3/4 teaspoon fine salt
1/4 teaspoon baking soda
1 1/2 cups packed dark-brown sugar
1 1/4 cups plus 2 tablespoons buttermilk
11 tablespoons (1 3/8 sticks) unsalted butter, melted and cooled
2 large eggs
1 tablespoon finely grated orange zest
2 teaspoons pure vanilla extract
1 1/2 cups fresh or frozen cranberries

Steps:

  • Preheat oven to 350 degrees. Line a 12-cup standard muffin tin with paper liners; set aside. Place flour, bran, baking powder, salt, and baking soda in a large bowl. Stir in sugar, and set aside.
  • Whisk together buttermilk, butter, eggs, zest, and vanilla in a bowl. Add flour mixture; stir until just combined. Stir in cranberries.
  • Divide batter among lined muffin cups. Bake until cooked through and golden brown, about 30 minutes. Transfer to a wire rack to cool slightly. Turn out; serve warm or at room temperature.

Tips:

  • Use fresh or frozen cranberries for the best flavor. If using frozen cranberries, thaw them before using.
  • Be sure to chop the cranberries into small pieces before adding them to the muffin batter. This will help them distribute evenly throughout the muffins.
  • For a sweeter muffin, add an extra 1/4 cup of sugar to the batter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • To make sure the muffins are cooked through, insert a toothpick into the center of a muffin. If it comes out clean, the muffins are done.
  • These muffins are best served warm with butter or cream cheese.

These dried cranberry muffins with buttermilk are a delicious and easy-to-make breakfast or snack. They're perfect for any occasion, from a casual brunch to a special holiday gathering.
