CHEF JOHN'S DUTCH BABIES
I've always been fascinated by how many different breakfast foods you can create using just milk, eggs, and flour; and this is one of the more interesting examples. Especially considering the unusual, and borderline disturbing name. Sometimes called German pancakes, these have very little to do with Germany, and nothing to do with the Dutch. Apparently they were invented by German immigrants who were referred to as Dutch.

MEAN'S DUTCH BABIES
A simple and tasty breakfast/brunch treat. This is an adopted recipe from the RecipeZaar account, and I am delighted to be the new owner of such a winning recipe. If you would like the inside of the finished dish to be a little less "egg-y" then cut the number of eggs down to 3, and many many reviewers also found that just 3 Tablespoons of butter worked better for them. Either way they did it, they all agreed that the taste was great. Enjoy!

DUTCH BABIES LIGHTENED UP
I grew up eating "dutch babies" as we called them. Like a German Pancake. I lightened up this recipie using half the margerine, and trading out some of the eggs for egg whites.

Steps:
- Place butter in a 9x13 glass or nonstick pan and place in oven. Let the butter melt while the oven is preheating to 450 degrees.
- Take pan out of oven when butter is melted and tilt pan so the butter coats the bottom of the pan.
- Mix the rest of ingredients in a blender or mixer.
- Pour mixture in hot buttered pan and bake for 9-11 minutes till top looks firm and not wet looking or when edges just start to brown. You don't want the edges to be too brown.
- Enjoy with powdered sugar, fruit and cool whip, or syrup.

DUTCH BABIES (GERMAN PANCAKE)
Steps:
- Place butter in a square or rectangular flat bottomed casserole pan, we use two 8x12x2in pans, but you can use other sizes, just be sure that the sides of the pan(s) are at least 2 inches tall and the batter is only about 1/2 in deep at most. If the batter is too deep, it will not develop hills, but if it is too thin it will crisp or burn before hills form. Place pan in oven and pre-heat oven (and pan) at 425 degrees; melting butter while you prepare the batter. Whisk milk, flour, and eggs until smooth. Pour batter into pre-heated pan, and return to oven. Bake for approx. 20 minutes or until the peaks are golden brown. Remove from oven, slice into big squares, and serve while hot.
Tips for Making Dutch Babies:
- Use fresh ingredients, especially for the milk and eggs. Room temperature ingredients will create a fluffier batter.
- Make sure the pan is hot before adding the batter. This will help the Dutch baby rise and cook evenly.
- Don't overmix the batter. A few lumps are okay.
- Bake the Dutch baby in a preheated oven. This will help it cook evenly.
- Serve the Dutch baby immediately with your favorite toppings. Some popular toppings include butter, powdered sugar, lemon juice, fruit, and whipped cream.
Conclusion:
Dutch babies are a delicious and easy-to-make breakfast, lunch, or dinner option. They are perfect for special occasions or a casual meal. With a little practice, you can master the art of making Dutch babies and impress your friends and family. So next time you're looking for a new recipe to try, give Dutch babies a try. You won't be disappointed!
