You can use this sauce in spicy tuna rolls, or on a volcano or lava roll. jb4 and I looked EVERYWHERE for this recipe and the Sriracha hot sauce is the secret ingredient. You can be authentic and use "real" Japanese mayonnaise (QP, Kewpie), but good old Hellman's works fine too. If you don't want the roe...leave it out, I think it is mainly for color and texture. If you omit the roe this is especially good for making tuna salad.

2-1/2 pounds ground beef
5 medium green peppers, finely chopped
4 large onions, chopped (6 cups)
1 can (28 ounces) crushed tomatoes in puree
1 can (16 ounces) tomato sauce
1 can (12 ounces) tomato paste
1 cup water
2 tablespoons sugar
2 tablespoons garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried oregano
2-1/4 teaspoons salt
2 teaspoons hot pepper sauce
1-1/2 teaspoons pepper
1/2 teaspoon crushed red pepper flakes, optional
16 hoagie buns or other sandwich rolls, split

Steps:

  • In a Dutch oven, cook beef over medium-high heat 8-10 minutes or until no longer pink, breaking into crumbles; drain., Stir in all remaining ingredients except buns. Bring to a boil. 2 dozen frozen mussels on the half shell, thawed
1 1/2 tablespoons half-and-half
1 cup japanese mayonnaise, Kewpie brand
1 -1 1/2 teaspoon sriracha sauce or 1 -1 1/2 teaspoon chili-garlic sauce
1 1/2 tablespoons masago smelt roe
instant dashi stock, pellets
fresh lemon, for garnish

Steps:

  • Pre-heat your broiler or toaster oven to 350 degrees.
  • Detach mussels from the shell and replace back. Arrange them in the same way on the baking pan. Set aside as you prepare the sauce.
  • To prepare the sauce, first drop a pinch of the Hon Dashi pellets in a medium bowl and dissolve completely with the half and half.
  • Then add the Kewpie mayo. Combine the mixture with a spoon until smooth. Add the Sriracha or chili sauce and fully incorporate it into the sauce.
