4 teaspoons baking powder

¼ cup cane sugar
¼ cup unsalted butter (4 tablespoons )

3 medium apples ( peeled and cubed, 2 honey crisp 1 granny smith )
1 teaspoon cinnamon
¼ cup cane sugar

Steps:

  • Preheat the oven 375 degrees.
  • Grease a 9-inch spring form pan or metal baking dish. Set aside.
  • In a large mixing bowl, sift together the flour, baking powder, sugar and salt.
  • Next, using two knives or a fork gently cut the soft butter into the flour mixture. Making sure to incorporate it until there are no large lumps.
  • Next, add a whisked egg, vanilla and milk.
  • Gently fold everything together until the batter forms. It will be slightly sticky so don't worry. The juice from apples will moisten the cake as it bakes.

  • If you opt to slice the apples, you should get about 4 slices per quarter. If you cube the apples, just give them a rough chop. Each piece should be about the size of a nickel.
  • In a separate mixing bowl, add the cubed apples, cinnamon, cane and brown sugar. Toss until the apples are evenly coated.

  • Preheat the oven to 400°F Line the sides and base of a 8 x 8in square cake tin with parchment paper.

There's plenty of recipes for this cake listed, but I think this one sounds a little different. Found it online at Taste of Home. It looks fairly simple and baked in a loaf pan. It would be a great take along for potlucks or just an easy snack for the family. Now that our apple trees are full and ripe, it's a great time to try this out. As an update, finally got around to trying this and loved it. Simple, with a nice presentation and very good. I did add a cup of chopped pecans as we love nuts and everyone enjoyed it. Don't make the mistake I did though - be aware that the divided sugar puts 3 Tablespoons in the apples and then the 1 cup goes in the batter.

100g soft margarine
2 eggs
100g self-raising flour
