EAST AFRICAN BRAISED CHICKEN

This is a wonderful dish I found in "Cooking Light" magazine. This dish if full of flavor and despite all the ingredients, it is very easy to make. It's good served with rice and a flat bread. Braising in a this highly aromatic liquid yields an exceptionally flavorful and tender result.

AFRICAN-STYLE BRAISED CHICKEN IN PEANUT SAUCE (CROCK POT)

African-Style Braised Chicken in Peanut Sauce (Crock Pot) image

From "Delicious and Dependable Slow Cooker Recipes" by Judith Finlayson. Serve with white rice. Recipe calls for hot peppers and peanuts. I made it with 1 tsp. cayenne pepper instead of red chili pepper. By the way, I like the way it tastes cold the next day too!

Time 3h20m

Yield 6 serving(s)

Number Of Ingredients 15

1 tablespoon vegetable oil
3 lbs chicken pieces (skin on breasts, skinless legs and thighs)
2 onions, finely chopped
4 garlic cloves, minced
1/2 red chili peppers, minced or 1/2 green chili pepper
2 teaspoons curry powder
1 teaspoon dried oregano leaves
1 teaspoon salt
1/2 teaspoon black peppercorns, cracked
1/2 cup condensed chicken broth, undiluted
1/2 cup tomato sauce
1 bay leaf
1/2 cup peanut butter
2 tablespoons sherry wine or 2 tablespoons lemon juice
1 red bell pepper, finely chopped

Steps:

  • In a nonstick skillet, heat oil over medium-high heat. Add chicken, in batches, and brown on all sides. Transfer to slow cooker stoneware.
  • Reduce heat to medium, add onions and cook, stirring, until softened. Add garlic, chili pepper, curry powder, oregano, salt and peppercorns and cook, stirring, for 1 minute. Stir in chicken broth, tomato sauce and bay leaf and bring to a boil.
  • Pour mixture over chicken. Cover and cook on low for 6 hours or on high for 3 hours, until juices run clear when chicken is pierced with a fork.
  • In a bowl, combine peanut butter and sherry. Add a little cooking liquid and stir to blend. Add to slow cooker along with red pepper. Cover and cook on high for 20 minutes, until pepper is tender. Discard bay leaf.
  • Serve over hot white rice.

Tips:

  • Choose the right chicken: For this recipe, bone-in, skin-on chicken thighs or drumsticks are the best choices. They will stay moist and juicy during the braising process.
  • Marinate the chicken: Marinating the chicken in a mixture of spices and yogurt helps to infuse it with flavor and keep it tender. Be sure to marinate the chicken for at least 30 minutes, or up to overnight.
  • Brown the chicken: Before braising, brown the chicken in a hot skillet. This will help to develop flavor and color.
  • Use a flavorful braising liquid: The braising liquid is what will give the chicken its flavor, so be sure to use a flavorful liquid such as chicken broth, coconut milk, or tomato sauce.
  • Add vegetables: Vegetables such as onions, carrots, and potatoes are a great addition to this dish. They will add flavor and nutrition to the braise.
  • Cook the chicken until it is fall-off-the-bone tender: This will take about 1 hour and 30 minutes to 2 hours, depending on the size of the chicken pieces.
  • Serve with rice or your favorite sides: This dish is traditionally served with rice, but it can also be served with mashed potatoes, pasta, or your favorite sides.

Conclusion:

This East African braised chicken is a flavorful and satisfying dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a new chicken recipe, give this one a try!
