Yield Serves 6

Number Of Ingredients 11

1 pound linguine, broken in half
4 tablespoons oriental sesame oil
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1/4 teaspoon cayenne pepper
3 red bell peppers, seeded, thinly sliced
3 cups snow peas
1 large red onion, thinly sliced
3/4 cup honey-roasted peanuts, coarsely chopped
1/2 cup chopped fresh basil

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
  • Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.

Tips:

  • When choosing your pasta, select a variety that holds sauces well, such as penne, fusilli, or rotini. You can also use whole wheat or gluten-free pasta if desired.
  • Be sure to cook your pasta al dente, or slightly firm to the bite. This will help it hold its shape and texture in the salad.
  • For the dressing, use a light and flavorful oil, such as olive oil or sesame oil. You can also add in some vinegar, soy sauce, or citrus juice for extra flavor.
  • When assembling your salad, be sure to add a variety of colors and textures. This will make it more visually appealing and interesting to eat.
  • Don't be afraid to experiment with different ingredients. You can add in your favorite vegetables, proteins, or cheeses to create a unique and delicious salad.

Conclusion:

Asian pasta salad is a delicious and versatile dish that can be enjoyed for lunch, dinner, or as a side dish. It's easy to make and can be tailored to your own tastes. So next time you're looking for a quick and easy meal, give Asian pasta salad a try.
