EASY TOMATO BALSAMIC VINAIGRETTE
I can't take credit for this recipe. A friend of mine who is a chef gave me this and I love it. Serve over grilled vegetables, fish and of course your favorite salad greens. One note, using a tube of the "double-concentrated" tomato paste really does make a big difference, as well as using an aged Balsamic. But I have made it with every day Balsamic and "standard" tomato paste and it still is pretty tasty. I think the rice vinegar is very important to use, and shouldn't be substituted in this recipe.

Tips:
- Choose the right vinegar: Not all vinegars are created equal. For a classic balsamic vinaigrette, use a high-quality balsamic vinegar that is aged for at least 12 years. This will give your vinaigrette a rich, complex flavor.
- Use a good quality olive oil: The olive oil you use will also play a big role in the flavor of your vinaigrette. Look for an extra virgin olive oil that is fruity and flavorful.
- Emulsify the vinaigrette: To make sure the vinegar and oil don't separate, it's important to emulsify the vinaigrette. This means whisking the two ingredients together vigorously until they are combined.
- Season to taste: Once you've emulsified the vinaigrette, taste it and adjust the seasonings as needed. You may want to add more vinegar, oil, salt, or pepper.
- Use the vinaigrette immediately: Vinaigrette is best when used immediately. However, you can store it in the refrigerator for up to a week.
Conclusion:
Balsamic vinaigrette is a delicious and versatile dressing that can be used on a variety of salads, grilled vegetables, and even meat. It's easy to make and can be customized to your own taste. So next time you're looking for a quick and easy dressing, give balsamic vinaigrette a try. You won't be disappointed!
