Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 13

6 cups finely shredded cabbage (you can use coleslaw mix)
1 cup vegetable broth (beef broth ok)
1 (15 ounce) can great northern beans or 1 (15 ounce) can cannellini beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes (undrained)
1 (14 1/2 ounce) can sliced beets (undrained)
1 (8 ounce) can tomato sauce
1 large onion, sliced (rings separated)
1/4 cup sugar
2 tablespoons vinegar
1/4 teaspoon dried dill (optional)
1/4 teaspoon pepper
6 tablespoons sour cream (optional)
6 fresh dill sprigs (for garnish) (optional)

Steps:

  • In a soup pot, mix together all ingredients except sour cream and dill sprigs.
  • Bring to a boil, then reduce heat, cover, and simmer 18-20 minutes.
  • Serve garnished with sour cream and dill sprigs.

Tips:

  • Use fresh beets: Fresh beets have a more vibrant color and flavor than canned beets. If you can't find fresh beets, you can use canned beets, but be sure to drain and rinse them well before using.
  • Roast the beets: Roasting the beets brings out their natural sweetness and flavor. You can roast the beets whole or cut them into chunks. Be sure to toss the beets with olive oil or butter before roasting.
  • Use a good quality broth: The broth is the base of the borscht, so it's important to use a good quality broth. You can use beef broth, chicken broth, or vegetable broth. If you're using a canned broth, be sure to choose a low-sodium broth.
  • Add vegetables: Vegetables add flavor and nutrition to the borscht. You can add any vegetables you like, but some common vegetables to add include carrots, celery, onions, and potatoes.
  • Finish with sour cream and dill: Sour cream and dill are traditional garnishes for borscht. They add a creamy, tangy flavor to the soup.

Conclusion:

Borscht is a delicious and nutritious soup that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste. With a few simple tips, you can make a delicious pot of borscht that your whole family will enjoy.
