Breakfast Casserole in a Slow Cooker image

Cooks while you sleep! Some fun variations of this recipe: before cooking (during prep) you can add chunks of sourdough bread, diced chiles, salsa, and/or diced green onions. You can use sage or regular sausage in place of the maple sausage, if desired.

CROCK POT BREAKFAST CASSEROLE

Crock Pot Breakfast Casserole image

I came up with this by combining other recipes. We keep a small slow cooker in our camper and I often make this when we go camping. I just throw everything together before we go to sleep and it's ready for us in the morning.

Provided by JenniferK2

Categories     Breakfast

Time 10h

Yield 4 serving(s)

Number Of Ingredients 9

16 ounces hash browns, frozen
1/2 lb bacon, cooked and crumbled
1/2 medium onion, diced
1/2 medium bell pepper, diced
3/4 cup cheddar cheese, shredded
6 eggs
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place a layer of frozen hash browns on the bottom of the crock pot, followed by a layer of bacon, then onions, bell pepper and cheese.
  • Repeat the layering process two more times, ending with a layer of cheese.
  • Beat the eggs, milk, salt and pepper together.
  • Pour over the crock pot mixture.
  • Cover and cook on low 8-10 hours. Note based on harsh review: If you know your slow cooker runs hot, reduce the time accordingly. I have made this many times at the stated time with great results - best between 8-9 hours, well done at 10, but not burnt.

Tips:

  • Utilize the Right Pan: Choose a 9x13 inch baking dish for even cooking and to prevent the casserole from overflowing.
  • Eggs and Milk Ratio: For a creamy and flavorful casserole, maintain a 1:1 ratio of eggs to milk. Adjust the quantities as needed.
  • Seasoning is Key: Don't shy away from seasonings. Salt, pepper, garlic powder, and paprika are classic choices, but feel free to experiment with your favorites.
  • Veggie Variations: The beauty of this recipe lies in its versatility. Try different vegetables like spinach, zucchini, mushrooms, or bell peppers.
  • Cheese Love: Enhance the casserole's richness with a blend of shredded cheddar and mozzarella cheeses. Parmesan adds a nutty flavor as a topping.
  • Overnight Magic: Save time in the morning by assembling the casserole the night before and refrigerating it. Just pop it in the oven in the morning for a hassle-free breakfast.
  • Garnish Elegance: Before serving, sprinkle some chopped fresh herbs like chives, parsley, or green onions for a vibrant touch.

Conclusion:

This easy breakfast casserole is a delightful blend of flavors and textures that will kick-start your day with a smile. Its simplicity and customizability make it a favorite among home cooks. Whether you're a seasoned chef or a beginner in the kitchen, this recipe promises a delicious and satisfying breakfast experience. So, gather your ingredients, preheat your oven, and embark on a culinary journey that will leave your taste buds dancing with joy. Happy cooking!
