EASY BAKED BEEF BRISKET
For a brisket recipe, this is considered very fast. The convention of cooking it low and slow often results in dried-out meat that never reaches the proper internal temperature. Instead of waiting all day and risking such disappointment, we dial up the temperature slightly and bake it in about half the time to ensure it's both tender and moist. Garnish with chives if desired.

Steps:
- Season both sides of the brisket generously with salt, pepper, and cayenne. For best results, place brisket over an aluminum foil "rack" set over a plate and refrigerate, uncovered, 8 to 12 hours.
- Preheat the oven to 325 degrees F (165 degrees C).
- Melt butter in a saucepan over medium heat. Add onion and salt. Cook and stir until translucent, about 5 minutes. Stir in garlic, rosemary, and apple juice. Increase heat to high and boil until liquid is reduced by about half, about 3 minutes.
- Transfer half of the apple-onion mixture into a baking dish. Place brisket fat-side up on top; cover with remaining apple-onion mixture. Cover baking dish tightly with foil.
- Bake in the preheated oven for 1 hour 30 minutes. Reduce oven temperature to 250 degrees F (121 degrees C) and bake until fork-tender, about 2 hours 15 minutes. Check for doneness after 2 hours.
- Transfer brisket to a plate and tent with foil.
- Pour the onions and braising liquid into a large measuring cup or bowl. Skim some fat off the top. Puree with a stick blender to create a gravy.
- Slice brisket across the grain and serve with the gravy.

- In a small bowl, combine the first 7 ingredients. With a fork or sharp knife, prick holes in briskets. Rub meat with seasoning mixture. Cover and refrigerate overnight., Preheat oven to 325°. EASY CRANBERRY SWEET AND SOUR BRISKET
This has to be the easiest recipe for brisket and it is so good, you can also make this same recipe using a pot roast! If you can make this a day ahead the sauce flavor intensifies the following day, just rewarm over low heat. If you are making a larger brisket then double the ingredients but still only use 2 onions and 1-2 tablespoons fresh garlic. This brisket is melt in your mouth tender!

- Heat oil in a large Dutch oven over high heat.
- In a bowl mix together beer, cranberry sauce and ketchup; set aside.
- Sprinkle the brisket with salt and pepper (I use seasoning salt) brown on both sides about 6 minutes per side; transfer to a plate.
- Add in sliced onion and garlic (if using) saute for about 7-8 minutes or until soft, stirring with a wooden spoon and scraping the bottom of the pan.
- Transfer the brisket back to the pot and pour in the beer mixture and bring to a boil.
- Cover the pot tightly and transfer to the oven.
- Cook for about 3 hours at 325 degrees, or until the brisket is tender, seasoning the sauce with salt and pepper if desired the last 30 minutes of cooking.
- Transfer the brisket to cutting board and slice.
- Spoon any fat off from the top of the gravy.
- Transfer the slices to a serving platter and pour over the gravy.
- Delicious!
SUNNY'S EASY BBQ BRAISED BRISKET WITH SWEET POTATO AND CARROT MASH

- Coat the brisket on all sides with the rub and actually rub it in. Pull out a length of plastic wrap for the brisket and drizzle some oil where you plan to place the brisket. Place the brisket on top and drizzle the top with oil. Wrap tightly and rest at room temperature for 2 hours. If you are making this ahead of time, you can refrigerate, then rest on the counter for 2 hours before braising.
- Add 2 tablespoons of oil to a large Dutch oven over medium-high heat. When the oil begins to swirl, add the brisket and sear on all sides until browned, 3 to 4 minutes per side. Remove to a plate.
- Add the onions, carrots and potatoes to the pot and cook for a few minutes to coat them in the fat and get a bit of color. Make the contents of the pot as level as possible, toss in the garlic, then place the seared brisket on top of the vegetables.
- Stir together the BBQ sauce and stock in a medium bowl. Add to the pot around the brisket, being careful to only fill halfway up the brisket, leaving a bit of the seared meat above the liquid line (you may not use all the liquid). Raise to a boil and lower to a low simmer. Cook, covered, for 2 to 3 hours without peeking, until the brisket is tender!
- Remove the brisket from the pot to a plate and cover gently with aluminum foil. Remove the vegetables from the pot with a slotted spoon and place in a food processor. Blitz until smooth, adding liquid from the pot if needed for texture. Use the remaining liquid as a sauce for the brisket, if desired. Transfer the mash to a bowl and fold in the parsley. Serve with the sliced brisket and additional sauce.

- 1. In a small bowl, mix all the dry ingredients together.
- 2. In the bottom of a large roasting pan, mix all the liquid ingredients together, stirring well. Stir in the dry ingredients to make sauce.
- 3. Add the brisket to the pan and coat all sides with the mixture. Cover with foil and place in refrigerator for 3 to 6 hours to marinate, turning occsionally.
- 4. Preheat oven to 275 degrees.
- 5. Place brisket in oven and bake for approximately 5 hours or until meat is thoroughly cooked. Slice against the grain and serve.

- Coat brisket with rub. rest at room temp for 2 hours if desired.
- Brown brisket in olive oil in large dutch oven. remove.
- add onions, carrots, potatoes to pot and cook and stir to coat with oil for a few minutes. toss in garlic. Place seared brisket on top.
- Stir together BBQ sauce and beef stock in medium bowl. Add to pot. not too high for good braising. rasie to boil, then cover and simmer, or in a 300 degree oven for 2.5-3 hours.
- Remove brisket and cover with foil. remove veggies into cuisinart. Blitz until smooth with a little liquid if needed. Use remaining liquid as sauce for meat.

- Remove wrapper and absorbent sheet from frozen brisket (I forgot once, and didn't take out the absorbent pad--wouldn't recommend doing that!).
- Place brisket in large 10 x 13" pan with sides at least 2" - 3" high.
- Sprinkle generously with worcestershire, then liquid smoke.
- Sprinkle on salt, pepper, and garlic powder.
- Pour water AROUND roast--don't wash off the seasonings by pouring it OVER the roast!
- Cover completely with foil and place in oven.
- Bake at 250 degrees 8-10 hours. Don't worry if you're a half-hour late coming home from work! This roast will be fine at this temperature!
- Use the leftovers for BBQ, hot roast beef sandwiches, or beef stew. See my other recipes for directions.
- GRAVY:.
- In a 2 1/2 quart saucepan, place drippings.
- Add warm water, bouillon, liquid smoke, worcestershire,garlic powder, and salt and pepper to taste.
- Bring to a rolling boil.
- In a small covered container, place cold water and cornstarch. Shake well.
- Add to boiling broth, stirring constantly till thickened (some brands of cornstarch are less effective at thickening than others. You may need to add more. Just repeat the addition of cornstarch and cold water again, and bring back to a boil, stirring constantly.
- Serve with roast, potatoes and carrots.

- The day before cooking, cover the meat with the dry rub, massaging it into the brisket. Wrap in plastic wrap, put in a plastic bag and refrigerate overnight.
- The next morning, take brisket out, preheat oven to 275 degrees.
- Prepare your grill for indirect heat cooking.
- Place brisket fat side up on the unheated side of your grill. You should have a temperature around 250 degrees. If you have a smoker box, use it with hickory chips for three cycles of smoke. If you don't, don't worry about it.
- Let the brisket cook on indirect heat for three hours.
- Make a foil packet big enough for the brisket. After three hours, place brisket in the packet and pour in the braising liquid. Seal the foil packet and put brisket on a baking dish or pan.
- Place in oven, and forget about it for 5 hours.
- Check internal temperature every half hour after 5 hours. You want the center of the brisket to be around 190 degrees.
- Remove from oven, carefully pour braising liquid into a pan, and bring to a boil. Meanwhile, cover the brisket and let sit. You can turn off the oven and put the brisket back in after 15 minutes.
- Let the liquid boil down to a thick consistency. less than half of the original amount should remain.
- Slice brisket against the grain and drizzle sauce on top.
- Goes great with cole slaw!

- Chop shallots, garlic and onions-set aside.
- Dredge brisket in flour.
- Heat olive oil in nonstick pan over m-h heat and brown brisket on both sides.

- 1. PREP/PREPARE
- 2. Gather your Ingredients (mise en place).
- 3. Add the brisket, potatoes, onion, tomato, and egg to a small bowl, and thoroughly combine.
- 4. Season with salt, and pepper, to taste.
- 5. Add the grapeseed oil to a small cast-iron pan, or skillet over medium heat.
- 6. Add the mixed ingredients to the pan, and spread out evenly.
- 7. Let the pan sit over medium heat for 5 - 6 minutes without moving the pan.
- 8. Chef's Note: This will help to develop a nice crust on the bottom.
- 9. Reduce the heat to medium-low, flip the hash over, and allow to cook for an additional 4 - 5 minutes.
- 10. Chef's Note: The hardest part of this recipe is flipping the hash over... it takes a bit of practice. If it breaks up during the flipping, no worries, just serve it up as a "rustic" dish.
- 11. Chef's Note: By the end of the cooking time, the potatoes should be nice and tender.

- Combine the first seven ingredients and pour over the brisket. Allow to marinate for 24 hours in the refrigerator.
- When ready to bake, place the beef brisket in a roasting pan and pour the marinade over it.

I got this recipe from the Texas Beef Council. This recipe is quite delicious for its simplicity. I have made this brisket between 4-5 pounds also. But, did not change the ingredients. Just the cooking time. We also enjoy making sandwiches from the leftover Brisket. A roll, slaw and pickle on the sandwich is wonderful.

- Preheat oven to 300°F.
- Combine Chili sauce, coke and soup mix in a bowl to make a sauce.
- Place Brisket in heavy foil baking pan. Or, use your own pan and foil line same.
- Pour sauce mix over Brisket.
- Cover with foil and seal edges around baking pan.
- Bake for 1 hour PER POUND (3-4 hrs for 3.5lb brisket).
- Let sit in oven for 1 hour more with oven off. Do not open oven.
- Carve in thin slices against the grain and serve pan juices over brisket and on the side as an extra sauce.
- Sauce will be thin.
