3/4 cup instant rice
1/2 cup baby carrots, fresh (cut in half lengthwise)
1 cup broccoli slaw mix (may substitute broccoli florets)
1 (10 ounce) can cream of celery soup
1 (10 ounce) can cream of mushroom soup
2 tablespoons low sodium soy sauce
1 medium yellow sweet onion, chopped
1 cup roughly chopped canned artichoke heart (not marinated)
1 cup cubed Velveeta cheese (may sub cream cheese)
4 large uncooked boneless skinless chicken breasts, cut in half

Steps:

  • Grease the inside of the crock pot and dump in your rice and sprinkle carrots and broccoli slaw on top. In a bowl, mix the soup, onion, artichokes, soy sauce and cheese. Pour half the soup mixture over the rice/carrots and give it a stir. Place the chicken on top, then pour the rest of the soup mixture on top. Cover and cook for 3 hours on high. 2 slices day-old bread, coarsely crumbled or 1 cup coarse breadcrumbs
1/2 cup shredded low-fat cheddar cheese
2 tablespoons fresh parsley
1 minced garlic clove
6 cups broccoli florets (or cauliflowerets)
1 (1 1/4 ounce) envelope onion soup mix
1 cup water or 1 cup chicken broth
1 large chopped tomato

Steps:

  • In a small bowl, combine bread crumbs, cheese, parsley, 1 tbs oil, and garlic. Set aside.
  • Heat remaining tbs of oil in large skillet and cook broccoli/cauliflower 2 minutes, stirring frequently.
  • Blend soup mix with water and pour into skillet with broccoli.
  • Bring to boil and reduce heat to low.
  • Simmer uncovered, stirring occasionally, 8 minutes or until broccoli is almost tender. Add tomato and simmer 2 more minutes.
  • Spoon into 1.5 qt casserole dish, top with breadcrumb mixture.
  • Place under broiler 1-2 minutes until top is golden and cheese is melted.

4 medium boneless skinless chicken breast halves (frozen OK)
1/2 cup uncooked white rice, , regular or converted
1 cup hot water
1 chicken bouillon cubes or 1 teaspoon chicken bouillon
2 teaspoons onion powder
3 medium carrots, peeled and diced
2 heads broccoli, washed,florets removed in 2" pieces (stems discarded)
1 can cream of celery soup
1/2 cup milk
1 cup fresh, shredded, grated parmesan cheese (salt)
salt and pepper

Steps:

  • Combine hot water, chicken bouillon and onion powder.
  • Place rice in 13x9x2 pan and add hot water mixture.
  • Stir.
  • Add carrots in even layer on top of rice.
  • Place broccoli florets evenly atop carrot layer.
  • Place chicken breasts on top.
  • Frozen breast pieces need not be thawed.
  • Salt and pepper chicken pieces, if desired.
  • Thoroughly mix soup and milk.
  • Pour over chicken breasts.
  • Cover tightly with aluminum foil and bake at 400F for 45-60 minutes or until chicken breasts are fully cooked.
  • Remove foil, add fresh parmesan cheese during last 15 minutes of cooking time and continue baking UNcovered.
  • NOTE: If you must substitute canned, grated parmesan cheese, do not add until the last 5 minutes of cooking time.
  • Let stand 5 minutes before serving.

1/2 c milk
1 tsp soy sauce
dash pepper
1 bunch fresh broccoli, cut up, or 1 (20 oz.) pkg. frozen broccoli cuts, cooked and drained
1 can(s) (2.8 oz.) french fried onions

  • 1. In a 1 1/2 qt. shallow casserole combine soup, milk, soy sauce, and pepper. Stir in broccoli and 1/2 can of the onions.
