Steps:
- For tomato mixture: Heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and saute until just starting to turn golden (don't brown it), about 1 minute.
- Pour into a large mixing bowl. Let cool while you chop the tomatoes and basil.
- Pour tomatoes into bowl with cooled oil mixture. Add parmesan, basil, balsamic vinegar, salt and pepper. Toss mixture well. Serve right away over toasted bread (spoon some of the juices along with it). Garnish with more parmesan if desired.
- To toast bread*: position oven rack a few inches below broil and preheat broiler. Align bread slices on an 18 by 13-inch baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to opposite side and broil opposite side until golden brown.

Steps:
- Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, fennel and eggplant and cook, stirring occasionally, until tender, 10 to 12 minutes. Stir in the garlic, red pepper flakes, 1 teaspoon salt and a few grinds of pepper. Add 1/4 cup water and cook, stirring, until the water is absorbed, about 2 minutes.
- Stir in the tomatoes and cook, stirring occasionally, until slightly softened, 3 to 5 minutes. Remove from the heat and stir in the olives and vinegar. Let cool about 20 minutes, stirring occasionally.
- Meanwhile, preheat the oven to 400 degrees F. Using a small serrated knife, hollow out the bread loaf, leaving a 1/2-inch-thick shell. Slice the cut-out bread into pieces and arrange on a baking sheet; drizzle with olive oil and season with salt and pepper. Bake until slightly toasted, 5 to 8 minutes.
- Stir the basil and cheese into the vegetable mixture; season with salt and pepper. Fill the loaf with the dip and top with more cheese. Drizzle with olive oil and serve with the toasted bread and crackers and/or crudites.

BEST EVER BRUSCHETTA
I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

Tips for Making Perfect Bruschetta:
- Use fresh, ripe tomatoes: The quality of your tomatoes will make a big difference in the flavor of your bruschetta. Look for tomatoes that are plump and juicy, with no signs of bruising or blemishes.
- Chop the tomatoes finely: This will help to release their juices and make them easier to spread on the bread.
- Season the tomatoes with salt, pepper, and olive oil: This will help to bring out their flavor.
- Use a good quality bread: A sturdy bread, such as a baguette or ciabatta, will hold up well under the weight of the tomatoes and toppings.
- Toast the bread: This will help to make it crispy and give it a nice flavor.
- Top the bread with the tomatoes and your favorite toppings: Some popular toppings include basil, mozzarella cheese, and prosciutto.
- Drizzle with olive oil and balsamic vinegar: This will help to add flavor and moisture to the bruschetta.
Conclusion:
Bruschetta is a delicious and easy-to-make appetizer that is perfect for any occasion. With just a few simple ingredients, you can create a dish that is sure to impress your guests. So next time you are looking for a quick and tasty snack or appetizer, give bruschetta a try. You won't be disappointed!
