1 clove garlic minced
1 1/2 cups tomato puree (passata)
1 1/2 cups water
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon salt
1 cup grated firm Mozzarella
1/4 cup freshly grated Parmesan Cheese
1 pound fresh Tortellini (I used meat filling)

Steps:

  • In a medium to large oven proof baking dish add the olive oil, garlic, puree, water, and spices, bring to a boil then simmer (half covered) for approximately 15-20 or until thickened. Stirring occasionally.
  • While sauce is cooking boil water, add salt and cook tortellini al dente. Drain
  • Add the tortellini to the cooked sauce and gently combine. Top with grated Mozzarella and sprinkle with Parmesan cheese. Place under the broiler for approximately 2-3 minutes or until cheese melts and top is golden. Let sit 2-3 minutes and serve. Enjoy!

1 tablespoon canola oil
1 (8 ounce) package fresh mushrooms, stemmed and sliced
2 tablespoons butter
¼ cup all-purpose flour
2 cups milk
salt and ground black pepper to taste
1 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, 3 to 5 minutes. Drain and place into a 9-inch baking pan.
