1/4 cup water
8 oz fresh green beans, trimmed (leave whole)
1 medium yellow bell pepper, cut into 1/2-inch pieces
2 medium plum (Roma) tomatoes, cut lengthwise in half, then sliced (about 1 cup)
1/2 cup balsamic vinaigrette dressing or Italian dressing

Steps:

  • In 12-inch nonstick skillet, cook bacon over medium heat 3 to 4 minutes, stirring occasionally, until crisp.

1 (1 ounce) package ranch dressing mix
2 large skinless, boneless chicken breasts, halved lengthwise

1 ½ pounds red potatoes, halved or quartered if large
1 pound baby carrots

¼ cup dry bread crumbs

Steps:

1 cup julienne (matchstick-cut) carrots (about 3 oz)
1/4 teaspoon pepper
1 tablespoon all-purpose flour
1/2 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1/4 cup medium-dry sherry or chicken broth
1/4 cup half-and-half
3 tablespoons grated Parmesan cheese
