EASY CROCK POT CHILI

My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

Very easy. I recommend using coarse-grind ground beef, but you can use any ground beef, or other ground meat if you like. Freezes well.

Time 8h10m

Yield 6 serving(s)

Number Of Ingredients 12

2 1/2 lbs coarse-grind ground beef or 2 1/2 lbs other ground meat
1 large onion, chopped
5 garlic cloves, sliced
seasoned adobo seasoning or seasoning salt, to taste
black pepper, to taste
ground red pepper, to taste
1 teaspoon ground cumin
1 teaspoon Mexican oregano or 1 teaspoon dried oregano
2 tablespoons chili powder
14 1/2 ounces peeled crushed tomatoes
8 ounces tomato sauce
10 1/2 ounces campbell's beef consomme

Steps:

  • Place beef, garlic and onion in a large skillet or dutch oven and brwon it, then drain any excess fat/drippings.
  • Place the meat mixture in the crock pot with the remaining ingredients and stir.
  • Cover and cook on low for 8-10 hours, or until meat is tender. Serve with beans if you like. Stir them in towards the end of cooking time so they heat up.

Tips:

  • Choose the right chili base: You can use beef, turkey, or chicken broth, or even a combination of all three. If you want a vegetarian chili, use vegetable broth.
  • Brown the meat: Browning the meat before adding it to the slow cooker helps to develop its flavor. You can do this in a skillet over medium heat, or in the slow cooker itself on the sauté setting.
  • Add plenty of vegetables: Vegetables add flavor, texture, and nutrients to chili. Some good options include onions, peppers, celery, carrots, and corn.
  • Use a variety of beans: Beans are a key ingredient in chili, and they add protein and fiber. You can use any type of beans you like, but some popular choices include kidney beans, black beans, and pinto beans.
  • Season the chili to taste: Chili is a versatile dish, so you can adjust the seasonings to your liking. Some common seasonings include chili powder, cumin, garlic powder, and paprika.
  • Let the chili simmer: The longer the chili simmers, the more flavorful it will be. Let it cook on low for at least 6 hours, or up to 10 hours. You can also cook it on high for 3-4 hours.

Conclusion:

Easy Crock-Pot Chili is a delicious and hearty dish that is perfect for a weeknight meal. It is easy to make, and the slow cooker does all the work. You can customize the chili to your liking by adding different types of meat, vegetables, and beans. It is also a great way to use up leftover meat and vegetables. Serve it with your favorite toppings, such as shredded cheese, sour cream, and diced onions.
