SLOW COOKER SOUTHERN LIMA BEANS AND HAM

Slow Cooker Southern Lima Beans and Ham image

I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

EASY CROCK POT HAM & LIMA BEAN SOUP

Easy Crock Pot Ham & Lima Bean Soup image

Growing up, I loved my mom's ham and lima bean soup. It's just good old comfort food for me. I've never made mom's recipe but was meaning to ask for it after one day picking up a couple cans of lima beans for no reason. It'd been months since buying them and I purchased a new bowl that I wanted to use for soup photos so I scrounged around in the pantry and fridge. This was the result. It's a light soup, not heavy with tomatoes or cream, which was perfect for a family of 4 all feeling under the weather. My family really enjoyed it. I hope you do too!

DAD'S LIMA BEAN SOUP WITH HAM BONE

Dad's Lima Bean Soup with Ham Bone image

This was one of my father's favorite dishes, a staple of Depression-era cooking when fresh meat was scarce and soup stretched everything. Simmered until thick, with chunks of ham - even lima-bean-haters enjoy this hearty soup.

CROCKPOT LIMA BEAN SOUP

Crockpot Lima Bean Soup image

This is an old recipe from the original crockpot that took me time to find. Great for winter or anytime. Use more or less ham/bacon to taste...ham for less fat, but bacon adds more flavor. I like adding a little more green pepper and onions...great for experimenting. Be prepared to sleep in separate rooms after eating or take some Bean-O!!!

Steps:

  • Place lima beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discard liquid., In a Dutch oven coated with cooking spray, cook onions and garlic until tender. Tips:

  • Choose the right ham. A bone-in ham will give the soup more flavor, but a boneless ham is easier to work with. If using a bone-in ham, be sure to remove the bone before serving.
  • Soak the lima beans. This will help them cook more evenly and reduce the cooking time. If you don't have time to soak the beans, you can add them to the soup dry, but they will take longer to cook.
  • Use a variety of vegetables. This will give the soup more flavor and nutrients. Some good options include carrots, celery, onions, potatoes, and corn.
  • Season the soup to taste. Add salt, pepper, and other spices to taste. You can also add a bay leaf or two for extra flavor.
  • Serve the soup hot. Crock pot ham and lima bean soup is best served hot, with a side of bread or crackers.

Conclusion:

Crock pot ham and lima bean soup is a hearty, flavorful soup that is perfect for a cold winter day. It is also a great way to use up leftover ham. With a few simple ingredients and a little time, you can have a delicious and satisfying soup that the whole family will enjoy.
