DEVILED EGGS II

Deviled Eggs II image

This recipe is the result of years of trial and error. It is an Easter tradition in our house. CAUTION: Very slippery. If carrying over carpet they will always land yolk-side down. Adjust the vinegar to taste.

Provided by Mary Brotherton

Categories     Appetizers and Snacks     100+ Deviled Egg Recipes

Time 35m

Yield 6

Number Of Ingredients 7

6 eggs
1 teaspoon white vinegar
1 tablespoon mayonnaise
¼ teaspoon prepared mustard
salt and pepper to taste
1 teaspoon paprika
2 leaves of lettuce

Steps:

  • Place eggs in a pot of salted water. Bring the water to a boil, and let eggs cook in boiling water until they are hard boiled, approximately 10 to 15 minutes. Drain eggs, and let cool. Once cool, remove the shell, cut the eggs in half lengthwise and scoop out the yolks.
  • Place the yolks in a medium-size mixing bowl and mash them. Blend in vinegar, mayonnaise, mustard, salt and pepper. You may need to add more mayonnaise to hold the mixture together, but it should be slightly dry.
  • Carefully put the egg yolk mixture back into the egg whites but do not pack it. There will be enough mixture so the whites are overfilled. Sprinkle with paprika. Place on bed of lettuce and/or garnish with parsley. Cool before serving.

Tips:

  • Use fresh, room-temperature eggs. This will ensure that they are easy to peel and that the yolks are creamy and flavorful.
  • Be careful not to overcook the eggs. Overcooked eggs will be dry and crumbly, and the yolks will be tough.
  • Use a sharp knife to cut the eggs in half. A dull knife will crush the eggs and make them difficult to stuff.
  • Remove the yolks carefully. Use a small spoon to scoop out the yolks, being careful not to break the whites.
  • Mash the yolks with a fork until they are smooth. If you want a creamy filling, add a little mayonnaise or sour cream.
  • Season the yolks to taste. Add salt, pepper, and other spices or herbs as desired.
  • Pipe the filling into the egg whites. Use a pastry bag or a small spoon to fill the egg whites with the yolk mixture.
  • Garnish the deviled eggs with paprika, chives, or other herbs. This will add color and flavor to the eggs.

Conclusion:

Deviled eggs are a classic appetizer that is perfect for any occasion. They are easy to make and can be customized to your liking. With a little creativity, you can create deviled eggs that are both delicious and visually appealing. So next time you are looking for a quick and easy appetizer, give deviled eggs a try!
