Time 15m

Yield 1 serving(s)

Number Of Ingredients 5

2 small eggs
1 1/2 tablespoons light cream cheese
1/4-1/2 teaspoon dried dill weed (use as much as you like, this comes down to personal preference)
1 sun-dried tomato, chopped (not the oil-packed kind)
salt and black pepper

Steps:

  • Place eggs in cold water in a pot. The eggs should just be covered by the water. Bring to a boil and let simmer for 10 minutes. Drain and rinse eggs with cold water for a minute or so (this makes peeling easier).
  • Peel the eggs and place in a bowl with the cream cheese. Mash using a fork until your egg salad has reached the consistency you prefer. I like to leave some larger chunks.
  • Add the dill, salt and pepper and sun-dried tomato pieces.
  • Mix and enjoy.

Unmold; serve with crackers or bread.

Nutrition Facts :

Tips:

  • Choose the freshest eggs possible. Fresh eggs will have a brighter yellow yolk and a thicker white, which will result in a more flavorful and creamy egg salad.
  • Hard-boil your eggs perfectly. Overcooked eggs will be dry and crumbly, while undercooked eggs will be runny and unsafe to eat. To ensure perfectly cooked eggs, place them in a single layer in a saucepan and cover them with cold water. Bring the water to a rapid boil, then cover the pan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be. Immediately transfer the eggs to a bowl of ice water to stop the cooking process.
  • Use a variety of ingredients to add flavor and texture to your egg salad. Some popular additions include celery, onion, pickles, bell pepper, ham, bacon, cheese, and nuts. You can also add herbs and spices, such as dill, parsley, chives, garlic powder, or paprika.
  • Don't overmix your egg salad. Overmixing will make the salad dry and crumbly. Gently fold the ingredients together until they are just combined.
  • Serve your egg salad immediately or chill it for later. Egg salad is best served fresh, but it can be chilled in the refrigerator for up to 3 days.

Conclusion:

Egg salad is a classic dish that is easy to make and perfect for a quick and easy lunch or snack. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying egg salad that the whole family will enjoy.
