Time 2h

Yield 192

Number Of Ingredients 9

24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons celery seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar

Steps:

  • In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
  • Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.

EASY GREEN TOMATO DILLS

EASY GREEN TOMATO DILLS image

One year, well actually several years for a while back, we had so many tommy toe tomatoes coming off they were up to our Yang-Yangs. Being a pickler I thought I must be able to do something with these, so I looked through all my pickling books & came up with this recipe. They look like olives in the jar but are really salty, sour. Great on an appetizer tray. This is from a Storey Publishing Bulletin A-91 called Pickles & Relishes

Categories     Other Appetizers

Number Of Ingredients 8

- 4 cups green cherry tomatoes
- 1 clove garlic
- 1/2 tsp. mixed pickling spices
- 1 fresh dill head or 1 tsp. dill seed
- 1 small piece hot red pepper (optional)
- 2 qts. water
- 2 cups white vinegar
- 1 cup pickling salt

Steps:

  • Wash tomatoes but do not peel or core. Pack loosley in a quart jar.
  • Add garlic, picling spices, dill & pepper.
  • In a medium size saucepan, combine water, vinegar & salt. Bring to a boil & stir to dissolve salt.
  • Pour hot brine over tomatoes in jar, leaving 1/4" headspace.
  • Seal.
  • Allow to cure 6 weeks before eating.
  • Keep refrigerated after opening.
  • Peggi's note: This says, "Yield: 1 quart" but can't be right because it calls for 2 quarts of water alone. I have in ( ) on this recipe the measures halved & quartered : water, vinegar, & salt. The other stuff is for 1 quart, all above the water. Can't believe they made that mistake.

6 -7 bay leaves

Tips:

  • Use a variety of spices: Dill is the classic herb for pickling green tomatoes, but you can also experiment with other spices such as garlic, peppercorns, mustard seeds, and bay leaves.
  • Make a flavorful brine: The brine is what gives pickled green tomatoes their tangy flavor. Use a combination of vinegar, water, sugar, and salt to create a brine that is both flavorful and acidic.
  • Pack the tomatoes tightly: When packing the tomatoes into jars, pack them tightly so that they are submerged in the brine. This will help to prevent spoilage.
  • Let the tomatoes pickle for at least 2 weeks: Pickled green tomatoes need time to develop their full flavor. Let them pickle for at least 2 weeks before enjoying.

Conclusion:

Pickled green tomatoes are a delicious and versatile condiment that can be used to add a tangy flavor to a variety of dishes. They are also a good way to preserve tomatoes that would otherwise go to waste. Whether you are a beginner or a seasoned pickler, these recipes will help you create delicious pickled green tomatoes that you and your family will love.
