2 cups cold 35% cream (500 milliliters)
1 cup ice
1/2 teaspoon sea salt

Steps:

  • Pour the cream into a food processor and process on high for about 5 minutes, or until the cream looks very curdled and it sounds splashy.
  • Strain the mixture through a fine-mesh sieve lined with cheesecloth and squeeze gently to remove as much of the buttermilk as possible.
  • Add the ice to a large bowl and cover with water. Add in the butter and, using your hands, squeeze and knead the butter just to get a bit more of the buttermilk out and lightly chill the butter. Drain away the water and ice, dry out the bowl and mash the salt into the butter.
  • Transfer to a serving vessel or wrap in wax or parchment paper and serve at room temperature or chilled.

Tips:

  • Use high-quality cream: The quality of your cream will directly impact the flavor of your butter. Choose a cream with a high butterfat content (at least 30%) for the best results.
  • Chill your cream and equipment: Chilling the cream and your equipment will help the butter to separate more easily. This will result in a smoother, more consistent butter.
  • Don't over-churn: Over-churning the butter can result in a grainy texture. Churn the butter just until the solids and liquids have separated.
  • Rinse the butter: Rinsing the butter with cold water will help to remove any remaining buttermilk. This will result in a cleaner, more flavorful butter.
  • Salt to taste: Once the butter has been rinsed, you can add salt to taste. Be careful not to over-salt the butter, as this can ruin the flavor.

Conclusion:

Making butter at home is a fun and easy project that can be enjoyed by people of all ages. With just a few simple ingredients and a little bit of time, you can create your own delicious, fresh butter. So next time you're in the mood for some homemade goodness, give this recipe a try.
