1-1/4 pounds beef stew meat, cut into 1-inch cubes
2 tablespoons olive oil, divided
4 medium onions, chopped
6 garlic cloves, minced
2 teaspoons paprika
1/2 teaspoon caraway seeds, crushed
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 teaspoon salt, optional
2 cans (14-1/2 ounces each) reduced-sodium beef broth
2 cups cubed peeled potatoes
2 cups sliced carrots
2 cups cubed peeled rutabagas
2 cans (28 ounces each) diced tomatoes, undrained
1 large sweet red pepper, chopped
Sour cream, optional

Steps:

  • In a Dutch oven over medium heat, brown beef in 1 tablespoon oil. Remove beef; drain drippings. Heat remaining oil in the same pan; saute onions for 8-10 minutes over medium heat or until lightly browned. Add garlic; cook 1 minute longer., Add the paprika, caraway, pepper, cayenne and salt if desired; cook and stir 1 minute. Return beef to pan. Add broth, potatoes, carrots and rutabagas; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until vegetables are tender and meat is almost tender., Add tomatoes and red pepper; return to a boil. Reduce heat; cover and simmer 30-40 minutes or until meat is tender. Serve with sour cream if desired.

This is a quick version of Hungarian Soup but it is still as thick, rich, spicy, warming and filling as Hungarian Soup should be! I've been making versions of this soup for 20 years, depending on what I have on hand in the pantry, so don't be afraid to make substitutions or omissions. This is a perfect main-meal soup for lunch on a cold winter's day. Serve it with pumperknickel or rye bread. For a special treat, team it with andypandy's German Onion Pie. (Recipezaar #77687). I don't claim that this is an authentic Hungarian Soup - but I do guarantee that it tastes delicious!

2 tablespoons oil
3 onions, chopped
50 g pepperoni, chopped
300 g minced beef (ground beef)
1 tablespoon mild paprika
2 teaspoons caraway seeds
1/4 cup flour
3 cups beef stock (use 3 1/2 cups if you want this soup to serve 6)
1 (410 g) can diced tomatoes, undrained
1/4 cup red wine
3 tomatoes, diced
1 cup sauerkraut, excess moisture squeezed out,then chopped

Steps:

  • In a large saucepan or stockpot, heat oil then cook onions over a medium heat until soft and transparent.
  • Add pepperoni and cook, stirring, for about 1 minute or until fragrant.
  • Add mince and cook, stirring, until the meat is just coloured.
  • Add paprika and caraway seeds and cook, stirring, for 1 minute.
  • Add flour, stir well and cook for 1 minute before removing saucepan from heat.
  • Slowly stir in beef stock, scraping up any bits from the base of the saucepan.
  • Add canned tomatoes (including their juice), red wine, and fresh, diced tomatoes.
  • Return saucepan to heat and bring the soup to a boil.
  • Reduce heat and add sauerkraut.
  • Simmer gently, stirring occasionally, for 20 minutes before serving.
  • May be served with a dollop of sour cream, if desired, but it's a pity to dilute the strong taste of this soup.
  • (This makes a fairly salty soup, so use reduced salt beef stock if this is an issue for you).

GRANDMA'S EASY HUNGARIAN DUMPLING SOUP

Grandma made these dumplings in her homemade tomato soup, it was my idea to make them with chicken soup. So you can make them however you want, I just love them so much I put them in Ham & Bean soup and they are wonderful.

2 qt chicken broth
1 c rotisserie chicken, chopped
1 tsp parsley flakes
DUMPLINGS
2 c flour
1 tsp baking powder
3/4 tsp salt
2 eggs
3/4 c milk

Steps:

  • 1. Put the broth, chicken, & parsley flakes in a pot and begin heating.
  • 2. Meantime make the dumplings: put the flour in a bowl with the baking powder & salt, mix well. Put the eggs in a measuring cup and beat with a fork then add milk to make a cup. (this should be enough milk but if not add more milk). Make it a consistency that can be dropped off a spoon.
  • 3. When the soup begins to boil dip your spoon to heat it so the dumpling mixture does not stick to the spoon. Take appx. a teaspoon of mixture and dip it into the soup until all the dumplings are in the soup.
  • 4. After the last dumpling is put in the soup, cook for just a few minutes, they cook very quickly you are ready to eat!
  • 5. Note: you can put carrots, onions, celery or any thing else you want in this soup. My husband cannot eat somethings so I make it plain and it is great. Make on a cold winter day and it will warm you right up!
