½ (8 ounce) package Neufchatel cheese, softened
¼ cup freshly squeezed lemon juice
2 eggs, at room temperature
1 tablespoon lemon zest
1 cup blueberries, fresh or frozen
1 ½ cups powdered sugar
3 tablespoons lemon juice, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.

1 cup sour cream
½ cup vegetable oil
½ cup freshly squeezed lemon juice
4 large eggs
1 (3 ounce) package instant lemon pudding mix
zest of 1 lemon, or more to taste
1 tablespoon poppy seeds, or more to taste
½ teaspoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube cake pan.

1 box yellow cake mix
3 eggs
1 (21 ounce) can lemon pie filling
1/4 cup water
1/4 cup vegetable oil
1/2 can duncan hines creamy home-style classic vanilla frosting (or flavor of your choice)

Steps:

  • Pour yellow cake mix into large mixing bowl.
  • Add 3 eggs, 1 can Lemon Pie Filling, 1/4 cup water, and 1/4 cup vegetable oil.
  • Mix with mixer for 2 minutes on medium-high speed.
