DUXELLES - A SIMPLE SPREAD

Yield Makes 2 cups

Number Of Ingredients 7

2 tablespoons unsalted butter
1/4 cup finely chopped shallot
1 garlic clove, minced
1 pound assorted mushrooms (such as shiitake, white button, and cremini), stem ends trimmed, finely chopped
Coarse salt
1 tablespoon finely chopped fresh flat-leaf parsley
1/8 teaspoon freshly ground pepper

Steps:

  • Melt butter in a large skillet over medium heat. Add shallot and garlic; cook, stirring, until softened, about 3 minutes. Add mushrooms and 1/4 teaspoon salt; cook, stirring, until mushrooms have softened and released their liquid, about 7 minutes. Raise heat to medium-high; cook until liquid has evaporated, about 3 minutes more. Stir in parsley, 1/2 teaspoon salt, and the pepper. Let cool completely.

Tips:

  • Choose the right mushrooms. While the recipe calls for cremini mushrooms, you can also use white button mushrooms, shiitake mushrooms, or oyster mushrooms.
  • Don't overcrowd the pan. When cooking the mushrooms, be sure to give them plenty of room in the pan so that they can brown evenly.
  • Season the mushrooms well. Be generous with the salt and pepper when seasoning the mushrooms. This will help to bring out their flavor.
  • Let the spread cool before serving. This will help the flavors to meld together and will make the spread easier to spread.

Conclusion:

This mushroom spread is a delicious and versatile addition to any meal. It can be used as a sandwich spread, a dip for vegetables, or a topping for grilled meats. It's also a great way to use up leftover mushrooms. With its rich, earthy flavor, this spread is sure to be a hit with everyone who tries it.
