3 slices bacon, diced
2 cups diced potatoes
1/4 cup chopped onion
1 (8 ounce) bottle clam juice
2 (6 1/2 ounce) cans minced clams
2 cups heavy cream

Steps:

  • In a 3 quart saucepan, brown bacon over medium heat (do not drain drippings).
  • Add potato and onion and saute for about 7 minutes.
  • Drain the minced clams and reserve the liquid.
  • Add clam juice and reserved clam liquid to mixture in saucepan.
  • Cover and simmer 15 minutes or until potato is tender.
  • Stir in cream and clams and bring to a slow simmer.
  • DO NOT BOIL.

2 (7 ounce) cans minced clams
5 slices bacon, diced
2 cups water
5 medium potatoes, peeled and diced
1 onion, diced
1 (12 ounce) can evaporated milk or 1 (12 ounce) can heavy cream
1 cup milk
1 1/2 teaspoons salt
pepper, to taste

Steps:

  • Drain clam juice and set aside.
  • Fry bacon and when half done put onions in fat and then add potatoes for a few minutes to absorb flavor of the bacon fat and saute briefly and gently.
  • Put those ingredients in a pan with the clam juice, salt, pepper and water and simmer until the potatoes and onions are done.

1/4 cup carrot, chopped

1 cup milk
1/2 cup water
1/2 teaspoon salt

10 strips bacon
1 leek
1/2 sweet onion
3 stalk(s) celery
3 carrots
4 potatoes
4 clove garlic
1/3 c butter
2 bottle clam juice, 8 oz
3 can(s) whole baby clams, 10 oz.
2 can(s) chicken broth, 14.5 oz
1/4 c flour
2 c milk
2 Tbsp dried oregano
1 tsp black pepper
1/2 tsp liquid smoke

Steps:

  • 1. Cut bacon into 1/2″ pieces. Rinse leek under cold water; cut off root end and slice in half. Cut into 1/2″ pieces. Rinse celery and cut into 1/2″ pieces. Clean garlic and mince finely. Clean onion and dice. Clean carrots and cut into 1/2″ pieces. Wash and cube potatoes; no need to peel if you are using red or yellow potatoes. In a large stock pot, brown the bacon over medium high heat. Remove from pot with slotted spoon and set aside. To the drippings in the pot, add the butter and melt. Add the leek, onion, celery and garlic. Cook and stir for 10 to 12 minutes. Add the potatoes and carrots. Cook and stir for 5 minutes longer. Add the chicken broth, clam juice and liquid smoke. Whisk well so that no lumps remain. Add to the broth and stir until slightly thickened. Stir in drained clams. Turn heat to low and cook, stirring frequently, for 12 to 15 minutes.
