Number Of Ingredients 10

2 cups all-purpose flour
1 cup quick-cooking oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup orange juice
1/2 cup egg substitute
1/3 cup canola oil
1 tablespoon grated orange zest
3/4 cup chopped fresh or frozen cranberries, thawed

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the orange juice, egg substitute, oil and orange zest; mix well. Stir into dry ingredients just until moistened. Fold in cranberries., Pour into an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

grate rind of one orange
3/4 c sugar
1/2 c butter
2 can(s) refrigerated biscuits

Steps:

  • 1. Grate rind of one orange. In a small saucepan, add orange rind, sugar and butter. Mix and cook until thick and sugar has dissolved. Cool slightly.
  • 2. Take the two tubes of refrigerated biscuits and cut them into quarters. I use kitchen shears to make it easy. Place the quartered biscuits into a buttered loaf pan.
  • 3. Pour orange/sugar/butter mixture over the top. Bake at 350 degrees for 25-30 minutes. Dump out immediately onto aluminum foil or plate. Enjoy!
