4 cloves garlic, minced, or more to taste
2 tablespoons olive oil

1 cup milk
1 cup crushed Corn Flakes cereal (about 1 ¾ cups whole cereal before crushing)

4 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon bon appetit seasoning salt
1/2 teaspoon black pepper
4 tablespoons parmesan cheese (Kraft is fine!)
1 teaspoon paprika
1 tablespoon dried parsley flakes

  • Preheat oven to 375°F.
  • Oil or spray 9x13 baking pan.
  • Pat chicken dry and place in the pan. Drizzle or brush with olive oil and sprinkle with the remaining ingredients in order of recipe.
  • THE INGREDIENT AMOUNTS GIVEN ARE APPROXIMATE! Use more or less to suit your taste and to give a nice even coating of each ingredient on the chicken pieces. Steps:

  • Preheat the oven to 425 degreeas F. Set an XL cast iron sauté pan (or another deep 14 inch oven-safe pan) over medium heat. Set the frozen peas out at room temperature to soften.
  • In a small bowl, mix the oregano, salt, garlic powder, and pepper. Sprinkle the seasoning blend over the chicken pieces and potatoes.
  • Add 1 tablespoon of olive oil to the skillet. Once the oil is hot, place chicken pieces in the skillet, skin-side-down. Brown the chicken skin for 4-5 minutes, then flip and cook another 4-5 minutes. Move the chicken pieces to a holding plate.
