1 (16 ounce) can canned pumpkin puree
1 (5 ounce) can evaporated milk
1/2 cup packed brown sugar
2 1/2 teaspoons pumpkin pie spice
2 tablespoons sugar
2 tablespoons butter, softened
1 teaspoon ground cinnamon

I am always looking for easy desserts to make for our pot luck dinners at work. I created this recipe from ingredients I had on hand. My co-workers loved them.

1 pkg cake mix of your choice (i used a yellow cake mix)
1 c butter, melted
1 can(s) pumpkin (small)
1 can(s) evaporated milk
3 tsp cinnmon
1/2 tsp ground cloves
2 tsp ground ginger
3 eggs
1 pkg cream cheese
11/2 c sugar
4 oz mini cinnamon chips

Steps:

  • 1. Heat oven to 350. Stir cake mix, 1 tsp. cinnamon, 1/4 tsp. cloves and 1 tsp. ginger together. Melt butter and add to dry mix. Take out about a third of the mixture (set aside) and form a crust with the rest in a 13 X 9" cake pan.
  • 2. Follow the pumpkin pie directions on the can of pumpkin using the eggs, evaporated milk, 1 cup of sugar and the remaining spices. Pour the mixture in the cake pan.
  • 3. Mix together the cream cheese and 1/2 cup sugar until well blended. Drop chunks of cream cheese and chunks of the reserved cake mix in the pumpkin batter. Sprinkle the mini cinnamon chips over the whole thing. Bake for approximately 90 minutes or until a toothpick comes out clean, Cool and cut into 12-16 bars.
