Discovered this twist on my favorite fall/winter sandwich and made it at home. Absolutely love it! And much easier than traveling across state to have it on my plate again. :-)

1 1/2 lb shaved roast beef
2 pkg au jus gravy mix
1 can(s) sliced mushroom pieces
1 small onion, julienne sliced
8 slice finlandia swiss lace cheese
1 Tbsp butter/margarine
1 pkg frozen french fries

Steps:

  • 1. Prepare au jus gravy mix according to package directions. Pour finished gravy into slow cooker, add roast beef. Set to low or warm and allow meat to heat through. (I allow at least two hours with crock pot on low)
  • 2. Prepare french fries according to package directions, season to taste.
  • 3. Saute drained mushroom pieces and onion in frying pan, set aside.
  • 4. Layer beef, mushrooms and onion on hoagie bun sliced lengthwise. Top with two slices swiss cheese per sandwich.
  • 5. Ladle au jus gravy into small cups for dipping sandwich and/or fries.
  • 6. Plate sandwich with fries and au jus cup. Can also add a pickle spear (I prefer kosher dill spears).

1 pound frozen french fries (about 5 cups)
1 1-pound boneless rib-eye steak, thinly sliced
2 tablespoons soy sauce
3 cloves garlic (1 grated, 2 sliced)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1 large red onion, thinly sliced
1/2 jalapeno pepper, chopped (remove seeds for less heat)
8 Campari or other small vine-ripened tomatoes (about 10 ounces), quartered
1 tablespoon red wine vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro

Steps:

  • Bake the fries as the label directs. Meanwhile, toss the steak with 1 tablespoon soy sauce, the grated garlic and a pinch each of salt and pepper in a bowl; set aside 10 minutes.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the steak in a single layer and cook, stirring once or twice, until browned but not cooked through, about 2 minutes. Transfer to a plate using a slotted spoon.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the red onion and jalapeno and cook, stirring, until slightly softened, about 3 minutes. Add the tomatoes and the sliced garlic; cook until the tomatoes start breaking down, about 3 minutes. Return the steak and any collected juices to the skillet along with the remaining 1 tablespoon soy sauce and the vinegar. Remove from the heat; add the fries, parsley and cilantro and toss. Season with salt and pepper.

1 (14 ounce) can whole tomatoes
1 (8 ounce) can tomato sauce
2 teaspoons salt
2 teaspoons sugar
1 lb uncooked elbow macaroni
1 (3 ounce) package cream cheese
1 cup grated cheese

  • cook beef until no longer pink. drain off fat; add tomatoes (squishing when you do), tomato sauce, salt, and sugar. simmer for about 10 minuets. Cook noodles according to package and drain. Blend sour cream, cream cheese, into beef mixture. Pour small amount of beef mixture into greased casserole; cover with layer of noodles and the grated cheese. Repeat layers; top with layer of cheese. Bake in 350 degree oven for 35 minuets.

This is a pretty fool proof way to make a roast beef. You can add or subtract any seasoning you want. * I don't add salt before cooking as it will draw out the juices. *Always check your roast with a meat thermometer, to get a perfect roast. I use a digital read thermometer. see bottom of directions for timetable. *Remember that the roast will continue cooking after you remove from the oven and let it sit. Usually about 5-10 degrees, so keep that in mind when you go to read the temperature *Allow the roast to sit for 10-15 minutes after removing from oven, so that the juices can redistribute, before you slice it.

3 -4 lbs roast beef
1/8 cup olive oil
1 teaspoon garlic powder
2 teaspoons fresh ground black pepper

  • Preheat Oven to 500 Degrees.
  • Remove Roast beef from package and rinse under cold water. Pat dry with paper towels.
  • Rub Olive Oil all over roast and put in roasting pan on a rack. (FAT SIDE UP).
  • Sprinkle Garlic Powder and Black Pepper all over roast.
  • Put in oven and roast at 500 degrees for 20 minutes.(do NOT open oven door during this step. You want the intense hot heat to "sear" the roast and keep in all the juices.).
  • After 20 minutes, lower the oven temperature to 300 degrees and continue roasting for at that temperature for 18 minutes per pound.
  • *3lb Roast- 54 minutes
  • *4lb Roast-72 minutes
  • I generally start checking the temperature after 45 minutes of cooking at 300 degrees. When the roast reaches the required temperature (see below) remove from oven and let sit for 10-15 minutes.

  • Rare- 125-130 degrees.
  • Medium rare- 130-140 degrees.
  • Medium- 145-150 degrees.
  • Well Done-155-165 degrees.

1 tsp plain flour
1 tsp mustard powder
950g beef top rump joint (see tip below)
1 onion, cut into 8 wedges
500g carrots, halved lengthways
1 tbsp plain flour
250ml beef stock

Steps:

  • Heat oven to 240C/220C fan/gas 9.
  • Mix 1 tsp plain flour and 1 tsp mustard powder with some seasoning, then rub all over the 950g beef top rump joint.
  • Put 1 onion, cut into 8 wedges, and 500g carrots, halved lengthways, into a roasting tin and sit the beef on top, then cook for 20 mins.
  • Reduce oven to 190C/170C fan/gas 5 and continue to cook the beef for 30 mins if you like it rare, 40 mins for medium and 1 hr for well done.
  • Remove the beef and carrots from the oven, place onto warm plates or platters and cover with foil to keep warm.
  • Let the beef rest for 30 mins while you turn up the oven to cook your Yorkshire puds and finish the potatoes.
  • For the gravy, put the tin with all the meat juices and onions back onto the hob.
  • Stir in 1 tbsp plain flour, scraping all the stuck bits off the bottom of the tin. Cook for 30 seconds, then slowly stir in 250ml beef stock, little by little.
  • Bubble to a nice gravy, season, then serve with the beef, carved into slices, carrots and all the other trimmings.
