This shrimp recipe is wonderful -- and that is saying something coming from me because I am not a big fan of spicy. It is NOT that spicy, in fact DH did not even come close to breaking a sweat which is how he gauges how spicy something is. You can always cut down on the amount of red pepper flakes if you want.

THE BIG EASY SPICY SHRIMP
Steps:
- Melt the butter in a large Dutch oven over medium heat. Stir in bell pepper, onion and celery. Cover and cook for 5 minutes, stirring 2 or 3 times, until vegetables are tender, yet still crisp. Meanwhile, combine spaghetti sauce and diced tomatoes with chilies in a separate, medium saucepan over medium heat. Cover, bring to a boil then reduce heat and simmer for 10 minutes. Add shrimp to the Dutch oven and increase heat to high. Cook 2 to 3 minutes while tossing, until shrimp are pink and just opaque in the center. Add sauce; stir well and return to a simmer. Serve shrimp over rice.
Tips:
- For the best flavor, use fresh shrimp. If using frozen shrimp, thaw them completely before cooking.
- To devein the shrimp, use a sharp knife to make a shallow cut along the back of the shrimp, from the head to the tail. Remove the vein and rinse the shrimp under cold water.
- To make the shrimp extra crispy, coat them in a cornstarch slurry before frying. To make a cornstarch slurry, mix together equal parts cornstarch and water until a smooth paste forms.
- Do not overcrowd the pan when frying the shrimp. This will cause the shrimp to steam instead of fry and will result in soggy shrimp.
- Cook the shrimp until they are golden brown and opaque throughout. Overcooked shrimp will be tough and rubbery.
- Serve the shrimp immediately with your favorite dipping sauce. Some popular dipping sauces for shrimp include cocktail sauce, tartar sauce, and sweet and sour sauce.
