1 (8 ounce) package cream cheese
1 teaspoon seasoning salt
1 cup dried bread crumbs, seasoned

Steps:

  • Thaw spinach and squeeze out water. Soften cream cheese.
  • In a mixing bowl, combine spinach, cream cheese and seasoning salt. Mix well and spoon into 2 quart casserole dish.
  • Sprinkle with bread crumbs and bake at 350 degrees F (175 degree C) for 20 minutes.

1 (8 ounce) package cream cheese, softened
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French-fried onions, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, cream cheese, mushroom soup and 1/2 of the fried onions; mix well. Transfer mixture to a 2 quart casserole dish and sprinkle with remaining fried onions.
  • Bake for 20 minutes, or until heated through.

It doesn't get much easier than this... no sautéing and hardly any chopping - everything is cooked in one dish before putting in the oven (I even bake it in my toaster over). A great way to use up spinach that's been in the fridge for a while. Use whole-wheat pasta for extra nutrients. You could probably sub rice for the pasta. Add a dash of hot sauce to jazz it up a bit. Measurements and cooking times are approximate.

2 cups vegetable broth
2 cups fresh spinach
1 large garlic clove, minced
1/4 cup fresh parsley, chopped (optional)
1 cup whole-wheat elbow macaroni, uncooked
2 -3 teaspoons tapioca starch (or cornstarch)
2 tablespoons cream cheese
4 eggs
1/2 cup cheddar cheese, grated
1 tablespoon breadcrumbs (optional)

Steps:

  • Preheat oven to 350°F.
  • Combine broth, spinach (don't bother chopping) and garlic in a saucepan; bring to a boil. Cook 5 minutes until spinach is wilted. Cream using a stick blender.
  • Bring back a boil, add pasta, and simmer until pasta is al dente.
  • Dilute starch in an equal amount of cold water. Stir into pot along with cream cheese. Simmer until thickened; remove from heat.
  • In a separate bowl, whisk eggs together. Stirring constantly, add several spoonfuls of the mix to the eggs (to warm them up). Stir into remaining pasta & sauce mix. Pour into an oven-safe dish (a 9-inch pie plate is the perfect size).

1 lb spicy pork sausage (browned and drained)
5 eggs
2 cups milk
10 3/4 ounces cream of mushroom soup
4 1/2 ounces mushrooms (drained and chopped)

1 cup cheddar cheese (shredded)
1 cup monterey jack cheese (shredded)

2 box frozen chopped spinach, thawed (squeeze out excess water)
8 oz cream cheese, room temperature
1 stick butter, melted
1 1/3 c shredded (not grated) parmesan cheese - (put aside 3 tbsp for topping)
6 oz french's french fried onions - (put aside enough to cover casserole for the last few minutes of cooking time).

Steps:

  • 1. Very simple - mix all ingredients in a greased casserole dish except the 3 tbsp of shredded Parmesan (I use my hands because it really blends it well). Once that is mixed, sprinkle remaining 3 tbsp of shredded Parmesan cheese on top.
  • 2. Bake at 350 degrees for 30 minutes until it is bubbly and the cheese is a golden color (longer if you are doubling the recipe).
  • 3. Cover casserole with the remaining french fried onions and bake for a few minutes until they are golden brown. Enjoy!!! :-)

Tips:
