Yield 6 serving(s)

Number Of Ingredients 18

2 tablespoons low sodium soy sauce
1 1/2 tablespoons brown sugar
1/4 cup creamy peanut butter
1/2 teaspoon ground ginger or 1 teaspoon finely minced fresh ginger
1 teaspoon sesame oil
1 teaspoon asian chili oil
1 tablespoon rice vinegar
3 tablespoons chicken broth
1 (6 3/4 ounce) package thin rice noodles
8 ounces frozen broccoli cuts (2 1/2 cups or half of a 14-ounce package)
3 medium carrots, peeled and sliced on the diagonal
1 tablespoon peanut oil or 1 tablespoon vegetable oil
1 teaspoon sesame oil
1 lb boneless skinless chicken breast, cut into bite-sized pieces
coarse-ground garlic salt
1 cup sliced mushrooms
green onion, thinly sliced
unsalted dry roasted peanuts, coarsely chopped

Steps:

  • In a microwave-safe bowl, whisk soy sauce and brown sugar together until dissolved then add gradually to peanut butter; stir until smooth; stir in ginger, sesame oil, chili oil, and rice vinegar; blend well.
  • FYI: At this point the thick peanut sauce makes a great dipping sauce!
  • Stir chicken broth into peanut sauce; cook in microwave oven about 45 seconds or just until bubbly around edges; stir and set aside.
  • Bring a large saucepan containing 5-6 cups water to a boil; remove pan from heat and add rice noodles; soak noodles in hot water for 3-5 minutes until they are cooked but still al denté firm; rinse noodles under cold water; drain and set aside; if your noodles are very long you may want to chop them into a more manageable length.
  • Meanwhile, peel carrots then slice them with a diagonal cut into pieces about 1/8" thick and 2" long; par boil or steam carrots slices together with frozen broccoli cuts for about 3 minutes or until carrots are barely crisp-tender and broccoli is no longer frozen; remove from heat and rinse under cold water; trim down any oversized pieces of broccoli; set aside.
  • Add peanut oil and sesame oil to a large nonstick skillet or wok over medium-high heat; heat until oil is almost smoking; add chicken to skillet and sauté 1 1/2 minutes or until the chicken is not quite done; add mushrooms, carrots, and broccoli to skillet; sauté another 1 1/2 minutes; add peanut sauce and toss about 30 seconds until chicken and veggies are evenly coated with sauce; add rice noodles; cook and toss for 1 minute until heated through.
  • Turn onto serving plate(s) and serve immediately garnished with sliced green onions and chopped peanuts.

EASY SWEET AND SPICY STIR-FRY SAUCE

Easy Sweet and Spicy Stir-Fry Sauce image

While making a sauce for pork chops one night, I thought this would be a good base for a sweet and spicy stir-fry sauce. Not only was it tasty, but it was simple. Who would've thought :) Add whatever type of meat and/or vegetables you want. DH and I like ours over steamed rice. Makes enough sauce for one large pan/wok of stir-fry.

EASY AND DELICIOUS STIR FRY SAUCE

Easy and Delicious Stir Fry Sauce image

This is so easy to make and tastes amazing on any stir fry. I usually use Chicken and loads of veggies, but pork or beef or even seafood would be great as well. The measurement are very approximate, as I NEVER measure when I make this. Just taste it as you go and adjust as you wish! You may need to make more or less of the sauce depending on the size of your stir fry. The servings are approximate based on my family.

BEST TASTING AND EASY STIR FRY SAUCE

Categories     Sauces

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1/2 cup chicken stock (or low-sodium broth)
3 tablespoons low sodium soy sauce
1 tablespoon sherry wine (or Chinese cooking wine)
1 tablespoon sugar
1 teaspoon cornstarch (dissolved in 1 tablespoon water)
1/2 teaspoon distilled white vinegar
1/2 teaspoon sesame oil
1 tablespoon peanut oil
3 tablespoons fresh ginger (peeled and minced)
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a small bowl, combine the stock with the soy sauce, sherry, sugar, cornstarch slurry, vinegar and sesame oil. Stir to dissolve the sugar.
  • In a medium saucepan, heat the peanut oil until shimmering. Add the ginger and crushed red pepper and cook over high heat, stirring, until fragrant and golden.
  • Add the stock mixture and boil over high heat until thickened and glossy, about 1 minute.
  • Note/Ideas: I usually add some garlic and some fresh orange juice instead of all that stock and 1/4 teaspoon of salt - I think this is really nice because it gives you a lot of sauce - I don't like a dry stir fry, especially over rice.

Tips:

  • Choose the right ingredients: Use fresh, high-quality ingredients for the best flavor. Look for vibrant vegetables, tender meats, and flavorful sauces.
  • Prepare your ingredients in advance: Cut your vegetables, marinate your meat, and measure out your sauce ingredients before you start cooking. This will help you save time and keep your stir-fry organized.
  • Use a hot wok or skillet: A hot wok or skillet will help your ingredients cook quickly and evenly. Make sure to preheat your pan over high heat before adding any ingredients.
  • Stir-fry in small batches: Don't overcrowd your pan. Stir-fry your ingredients in small batches so that they can cook evenly. This will also help prevent your stir-fry from becoming soggy.
  • Don't overcook your ingredients: Stir-fries are meant to be cooked quickly. Overcooking your ingredients will make them tough and chewy. Cook your vegetables until they are tender-crisp and your meat is cooked through, but not overdone.
  • Season to taste: Once your stir-fry is cooked, season it to taste with salt, pepper, and other spices. You can also add a splash of soy sauce, rice vinegar, or sesame oil for extra flavor.

Conclusion:

Stir-fries are a delicious, healthy, and easy-to-make meal. With a little planning and preparation, you can create a flavorful stir-fry that your whole family will enjoy. So next time you're looking for a quick and easy meal, give stir-fry a try.
