Steps:

  • Melt the butter in a microwave safe bowl for a 15-30 seconds. I used 1000watt microwave
  • Whisk the flour into butter, and microwave for another 15 secs.
  • Add Milk and whisk well, there should not be any lumps now.
  • Microwave on high for 1 minute, stopping it every 30 seconds for a stir.
  • Quick stir mixture and microwave again for 1-2 minutes more or till it thickness, stopping it every 30 seconds for a stir.
  • Once white sauce is thickened add salt and pepper to season and use it with any pasta dish you like.

Approximately 1 liter (0.3 US gal) of milk

Steps:

  • Heat a pat of butter in the heatproof jug/bowl for one minute until melted - 50 g or so will make about a litre of sauce.
  • Remove from microwave and add enough flour to make a paste like peanut butter consistency. The ratio of butter to flour should be 1 to 1; 50 g flour to 50 g butter.
  • Return to the microwave and cook in one minute intervals, stirring with the whisk, until the flour/butter mix resembles coarse sand - this is important. At this point, you have created a roux.
  • Stir in about a quarter of the milk - don't worry about the lumps, just give it a good stir.
  • Return to the microwave and cook for one minute intervals until you get a thick, probably lumpy paste. Give it a really good whisk at this stage to break up the lumps.
  • Add a little milk then give it another good whisk, repeat until all of the milk is added.
  • Return to the microwave and cook in one minute intervals, whisking in between, until the sauce actually boils - it must boil or it will taste floury.
  • Add a little more milk to make it thinner if necessary.
  • Finished.

The following are my simplified adaptations for Basic White Sauce, along with variations for Mustard Sauce, Cheese Sauce (Mornay Sauce) and Parsley Sauce.

2 cups milk (low fat or non-fat milk works fine)
100 g butter or 100 g margarine, chopped into small pieces
1/2 cup plain flour
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)

Steps:

  • Pour milk into a saucepan.
  • Add all other ingredients.
  • Place pan over a medium heat, and, using a wire balloon whisk, whisk sauce constantly until butter melts.
  • Be sure to work the whisk into the edges of the pan to incorporate all the flour.
  • Whisk frequently until the mixture comes to a boil.
  • Reduce heat to low and simmer for about 5 minutes, stirring occasionally, until the sauce reaches the desired consistency.
  • Taste and add extra seasoning if required.
  • Variations: Mustard Sauce Make sauce as per recipe, but use 1 ½ cups milk and ½ cup chicken stock.
