1 egg, beaten
2/3 cup milk
1 tablespoon ketchup
1 tablespoon soy sauce
1/2 cup herb-seasoned stuffing mix, crushed
1 small onion, minced
2 tablespoons finely chopped sweet red pepper
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground beef (90% lean)
Additional ketchup, optional

Steps:

  • In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. Shape into two loaves; place in an ungreased shallow baking pan. , Bake, uncovered, at 350° for 45-50 minutes. If desired, top loaf with ketchup before serving. Cool and freeze the other loaf.

1 pound ground beef
½ cup chopped onion
½ cup rolled oats
1 cup shredded Cheddar cheese
¾ cup milk
1 egg
1 teaspoon salt
⅔ cup ketchup
½ cup brown sugar
1 ½ teaspoons dry mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
  • Stir ground beef, onion, oats, Cheddar cheese, milk, egg, and salt together in a bowl; mix well. Divide meat mixture into 8 equal portions and form each into a loaf shape. Place loaves in prepared baking dish.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. 6 saltine crackers
1 egg
1/4 cup ketchup
1 tablespoon sweet relish
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon dried oregano
salt and pepper
2 (10 ounce) cans condensed tomato soup
1 (28 ounce) can tomato juice
5 potatoes, cut into quarters
6 carrots, cut into 1 inch thick pieces

Steps:

  • preheat oven to 350.
  • crush crackers.
  • beat egg.
  • combine all meat loaf ingredients.
  • mould into a log shape.
  • place into a deep oblong roasting pan (with lid).
  • Surround meat loaf with patatoes and carrots.
  • cover with 1 can of tomato soup and all of tomato juice.
  • Cover and bake for 1 hour.
  • Remove lid.
  • add second can of tomato soup, directly on top of meat loaf.
