1 8" flour tortilla ($0.14)
1 cup fresh spinach ($0.16)
4 large eggs ($0.92)
1/8 tsp salt ($0.01)
1/8 tsp freshly cracked black pepper ($0.01)
1/2 cup grape tomatoes ($0.37)
1/4 cup shredded cheddar ($0.21)
1/8 tsp crushed red pepper (optional) ($0.01)

Steps:

  • Preheat the oven to 350ºF. Brush the inside of a round, 7-inch diameter oven safe dish* with olive oil. Press the tortilla down into the dish so that the edges of the tortilla are folded up the sides of the dish (see step by step photos below).
  • Roughly chop the spinach then add it to the bottom of the tortilla. Crack the four eggs into the tortilla on top of the spinach. Add a pinch of salt and pepper on top of the eggs.
  • Slice the grap tomatoes in half, then sprinkle them over the eggs. Finally, top with shredded cheese.
  • Bake the egg filled tortilla in the oven for 20-25 minutes, or until the whites are set and the yolks are still jammy. You can shake the dish to see if the whites still jiggle or if they are set. Baking time may vary depending on the size of your tortilla and number of eggs used.

1 poblano chile pepper, seeded and diced
1 bunch scallions, sliced
1 red jalapeno pepper, halved, seeded and thinly sliced
1/2 cup fresh corn kernels

8 large eggs
4 cups tortilla chips, slightly crushed
1 cup shredded cheddar cheese (about 4 ounces)
1/4 cup fresh cilantro, torn, plus more for topping
Diced avocado, sour cream and pico de gallo, for topping

Steps:

  • Melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the poblano, scallions and jalapeno; cook, stirring occasionally, until slightly softened, 1 to 2 minutes. Add the corn and 3/4 teaspoon salt; cook, stirring occasionally, until the vegetables are soft, about 2 more minutes.
  • Whisk the eggs with 1/4 cup water and 1/2 teaspoon salt in a large bowl. Add the eggs to the skillet and cook, stirring constantly with a rubber spatula to form large curds, until the eggs are softly scrambled, about 2 minutes. 1 onion, finely chopped
2 tablespoons butter
2 (6 ounce) cans tomato sauce
1 (4 ounce) can diced mild green chilies
2 teaspoons oregano
1 teaspoon salt
1 (8 ounce) package tortilla chips
1/2 lb monterey jack cheese, cut in 1/2-inch cubes
3 cups cooked chicken, , chunked
1 cup sour cream, at room temperature
1/3 cup cheddar cheese, grated

Steps:

  • Preheat oven to 325 degrees.
  • Caot a 1 1/2 to 3 quart casserole with nonstick spray.
  • Saute onion in butter until transparent; add tomato sauce, chilies, oregano and salt.
  • Simmer sauce, uncovered for 10 minutes; remove from heat.
  • Layer in the casserole dish, in order, half the following: tortilla chips, jack cheese, chicken and sauce.
  • Repeat with the other half of each.
  • Bake for 20 minutes at 325 degrees.
