AVOCADO TOAST WITH EGG
I love avocado toast, and if you add an egg to it you have a full meal. Sometimes I use balsamic vinegar to flavor the avocado instead of the lemon juice. You can make the egg any way you like, but I like it best fried or poached.

JAMMY TOMATO TOAST WITH EGGS AND AVOCADO
This recipe was inspired by the popular Middle Eastern dish shakshuka - an aromatic tomato and pepper sauce that's topped with eggs for a satisfying meal any time of the day. Here, a similar sauce is simmered with sweet honey until jammy and then chilled for a different kind of spread on your morning toast. Each serving is topped off with a fried egg and sliced avocado for a quick and filling breakfast that aligns with the Mediterranean diet.

Steps:
- Heat 1 tablespoon of the olive oil in a medium pot over medium-high heat. Add the cumin, bell pepper, onion, red pepper flakes, 1 teaspoon salt and a few grinds of black pepper and cook, stirring occasionally, until the vegetables are softened and starting to caramelize in spots, 6 to 7 minutes. Stir in the garlic and cook until fragrant, about 1 minute.
- Add the tomatoes and their juices and use a potato masher to crush the whole tomatoes until no large chunks are remaining. Stir in the honey, 1/2 teaspoon salt and a few grinds of black pepper and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until the mixture has reduced by about half and resembles a thick jam, with little moisture left, about 1 hour 30 minutes.
- Transfer the mixture to a bowl or food storage container and let cool to room temperature for 30 minutes. Cover the jam and refrigerate until chilled, 1 hour and up to overnight.
- Just before serving, heat the remaining 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Crack the eggs into the skillet and fry until the whites are set but the yolks are still runny, 5 to 6 minutes.
- For each serving, spread about 2 tablespoons of the tomato jam on top of a piece of toast. Top the toast with a fried egg and a few avocado slices. Drizzle with hot sauce if using. Refrigerate any leftover jam in an airtight container for up to 1 week.

EASY EGG AND AVOCADO TOAST
Forget tortilla chips! Seeded whole grain bread, toasted to its full potential, is avocado's real soulmate. After a lifetime of knowing this power couple, I decided to throw some subtle spice and acid their way to better complement the healthy fats, especially when an egg is involved. Works the same if you skip the egg and make it vegan!

AVOCADO EGG SALAD TOAST
I had a surplus of avocados after purchasing too many for an event. A few days later, I was making egg salad sandwiches for lunch and had the fantastic idea to use avocado to bind it together instead of traditional mayo. Not only was this version unbelievably delicious but the healthy fats in the avocado make this a much better option than the traditional mayo-laden version. -Shannon Dobos, Calgary, Alberta

Tips:
- Use ripe avocados: Ripe avocados are creamier and have a richer flavor. To check if an avocado is ripe, gently squeeze it. If it yields to gentle pressure, it's ripe.
- Toast the bread: Toasting the bread will help it to hold up to the toppings and prevent it from getting soggy.
- Use fresh tomatoes: Fresh tomatoes will add a bright, juicy flavor to the toast. If you don't have fresh tomatoes, you can use sun-dried tomatoes or roasted tomatoes.
- Season the eggs: Season the eggs with salt and pepper before cooking. This will help to enhance their flavor.
- Cook the eggs to your liking: You can cook the eggs however you like them. Sunny-side up, over easy, scrambled, or hard-boiled are all good options.
- Assemble the toast: To assemble the toast, spread the avocado on the toasted bread. Top with the eggs, tomatoes, and any other desired toppings.
