Time 35m

Yield Four to eight servings

Number Of Ingredients 13

1/4 pound fresh sorrel
4 tablespoons butter
2 tablespoons flour
2 cups fresh or canned chicken broth
1 cup heavy cream
Salt to taste, if desired
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
Pinch of cayenne
8 cups water
2 tablespoons white-wine vinegar
8 eggs, at room temperature
8 thin slices white sandwich bread

Steps:

  • Pick over the sorrel. Discard any tough stems and blemished leaves. Rinse the leaves and pat them dry. Pack the leaves closely and cut them crosswise into very thin strips. This is called a chiffonade There should be about two cups or slightly more when loosely packed.
  • Heat one tablespoon of the butter in a saucepan and, using a wire whisk, stir in the flour. When blended, add the broth, stirring rapidly with the whisk. Let simmer about 10 minutes or until reduced to about one and one-quarter cups. Stir in the cream, salt and pepper and bring to the boil. Let simmer about five minutes or until reduced to one and three-quarter cups.
  • Meanwhile, heat one tablespoon of butter in a saucepan and add the sorrel. Stir until the sorrel is wilted and remove from the heat.
  • Scrape the sorrel mixture into the sauce. Stir in the nutmeg and cayenne.
  • Bring the water to the boil in a saucepan or deep skillet and add the vinegar. Carefully break the eggs into the simmering liquid, keeping them separate. Let them simmer until the whites are firm and the yolks remain soft. Carefully scoop out each egg and let drain on absorbent paper toweling.
  • Preheat the broiler.
  • Using a three-inch biscuit cutter, cut out the center of each bread slice. Or, alternatively, trim the outside crusts from the bread and cut each slice into two triangles. Melt the remaining two tablespoons of butter and butter each piece of bread on both sides and place under the broiler until golden brown on both sides, turning once.
  • Arrange one egg on each piece of round toast or two triangles and spoon an equal portion of the sauce over each serving.

PERSIAN EGGS POACHED IN TOMATO SAUCE

Persian Eggs Poached in Tomato Sauce image

I am fortunate to work at a place where the manager of the cafeteria is a Moroccan native. Our mutual love of food has resulted in endless exchange of recipes, spices and samplings. (Indeed, some of the items now served in the cafeteria are recipes from this site.) One one occasion, I was lucky enough to be able to share in the lunch he prepared for the staff. I love eggs and his were just amazing. This recipe from World Vegetarian seems like a close approximate - though I know his version included a generous bit of cumin and cilantro. I'm posting the original here and will begin to tinker. Once perfected, I'll post that version as a second recipe. Will experiment to see if this works as well with canned tomatoes.

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 8

1 1/2 tablespoons olive oil or 1 1/2 tablespoons butter
1 small onion, finely chopped
1 garlic clove, finely chopped
4 -5 medium tomatoes, peeled, seeded and chopped
salt (to taste)
pepper (to taste)
4 eggs
1 tablespoon chives, finely chopped

Steps:

  • Put the oil in a non-stick skillet over medium high heat. Add onions and garlic. Stir-fry for a minute, then reduce heat to medium. Continue cooking vegetables for 3 or 4 minutes so that the onion becomes translucent with a little color around the edges.
  • Add the tomatoes and simmer. Cook uncovered for 10 minutes. Season with salt and pepper to taste.
  • Once the sauce has cooked, use the back of a spoon to create 4 rounded wells, one in each quarter of the pan. Carefully break each egg and place into each of the hollows.
  • Cover pan with a lid leaving it partially open to allow some heat and moisture to escape. Cook until eggs reach your preferred level of doneness.
  • Carefully scoop egg with some sauce onto serving plates. Garnish with chives.
  • Serve with warmed pita or other flatbread of choice.
  • •Variation: You can make this a little spicier, add a small chili to the onions. If you do so, you may want to omit the chives and instead garnish with finely chopped parsley.

EGGS POACHED IN BUTTERY SORREL SAUCE

Eggs Poached in Buttery Sorrel Sauce image

Here's a delightful brunch number that takes great advantage of the first sorrel of spring, with the zesty leaves folded into a sauce made of scallions and loads of butter. Add eggs and cook until just set, then scoop everything up with toast.

Provided by Melissa Clark

Categories     dinner, easy, quick, weekday, main course, side dish

Time 30m

Yield 2 servings

Number Of Ingredients 10

2 fat scallions, trimmed
2 tablespoons unsalted butter
1 large bunch sorrel (about 4 ounces), stems trimmed
1/4 teaspoon kosher salt, more to taste
Ground black pepper
1/4 cup heavy cream
4 large eggs
Chile flakes, like Aleppo, Turkish or crushed red pepper
Flaky salt, like Maldon, for serving
Buttered toast, for serving

Steps:

  • Thinly slice scallions, separating darker green parts for garnish.
  • In a skillet over medium heat, melt butter. Add light green and white parts of scallion and sauté until wilted, 2 minutes. Add sorrel leaves, salt and pepper. Cook, stirring, until sorrel wilts and starts to break down, turning olive-green in color, about 3 minutes. Stir in cream and let simmer for 1 minute to thicken a bit.
  • Carefully crack eggs into skillet; they should fit in one layer. Lower heat to medium-low and sprinkle eggs with salt and pepper. Cover pan and let cook for 2 minutes, then turn off heat and let eggs rest, covered, until done to taste, about another 30 seconds for very runny yolks (the whites should cook through).
  • Carefully scoop eggs and sorrel sauce into two bowls. Season with chile and flaky salt; garnish with scallion greens. Serve with toast.

Tips:

  • Use fresh sorrel leaves for the best flavor. If you can't find fresh sorrel, you can use 1/2 cup of frozen sorrel or 1/4 cup of dried sorrel.
  • To make sure the eggs are cooked evenly, use a wide skillet so that the eggs have plenty of room to spread out.
  • Don't overcrowd the skillet with eggs. If you're making more than 4 eggs, cook them in batches.
  • Be careful not to overcook the eggs. The yolks should be slightly runny.
  • Serve the eggs immediately with the buttery sorrel sauce.

Conclusion:

These eggs poached in buttery sorrel sauce are a delicious and elegant dish that is perfect for a special occasion. The sorrel sauce is rich and flavorful, and the eggs are cooked to perfection. This dish is sure to impress your guests.
