QUICK ELEPHANT EARS

Quick Elephant Ears image

Our eight children love helping make these sweet crunchy treats. We fry flour tortillas for a few seconds in oil, then sprinkle with cinnamon and sugar. They're fun to make for a large group. I usually do the frying, then have one of the older kids add the coating.

ELEPHANT STEW

Elephant Stew image

The kids should like reading this one...it's an adaptation of a recipe from a July 1968 cookbook that was published by the local newspaper. I bought it at a garage sale and was entertained for hours by the great sounding recipes and the sponsor's ads. A new gas range, $118; a new full size refrigerator with automatic defrosting! $168... Mary Ferris had submitted a version of this recipe.

ROASTED ELEPHANT GARLIC CHEESE SPREAD

Roasted Elephant Garlic Cheese Spread image

Elephant garlic is actually a type of onion, with mild flavors of garlic, leek, and onion. When roasted, the caramelization produces a sweet nuttiness that complements cream cheese nicely. Spread this on crackers, put it on a bagel with some smoked salmon, or use it as a dip for veggies-the possibilities are endless!

Time 55m

Yield 8

Number Of Ingredients 5

4 cloves elephant garlic
3 sprigs fresh thyme
salt and freshly cracked black pepper to taste
1 tablespoon olive oil
8 ounces reduced-fat cream cheese, softened

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Trim root end from garlic cloves and remove skin. Place cloves on a large square of aluminum foil. Place thyme sprigs among the garlic, sprinkle with salt and pepper, and drizzle with olive oil. Fold up the sides of the foil to create a packet and place on a baking sheet.
  • Bake in the preheated oven until garlic is soft and golden brown, 45 minutes to 1 hour. Discard thyme and let garlic cool.
  • Place cream cheese into a medium bowl. Add garlic on top and mash cloves with a fork. Season with additional salt and cracked black pepper to taste, and stir mixture until evenly combined. Alternately, you may use a small food processor for a smoother consistency.

Tips:

  • Choose ripe bananas: The riper the bananas, the sweeter and creamier your shake will be.
  • Use frozen bananas: Freezing the bananas ahead of time will make them easier to blend and will give your shake a thicker, creamier texture.
  • Add a little bit of ice: If you want a colder shake, add a few ice cubes to the blender.
  • Don't over-blend: Over-blending can make your shake too thick and frothy. Blend just until the ingredients are combined and smooth.
  • Get creative with your toppings: You can top your elephant shake with any number of things, such as whipped cream, chocolate chips, sprinkles, or chopped nuts.

Conclusion:

Elephant shakes are a delicious, creamy, and refreshing treat that are perfect for any occasion. They're easy to make and can be customized to your liking. So next time you're looking for a sweet treat, give elephant shake a try!
