- Peel and cut potaoes into bite sized chunks. Place in pan with water and boil until fork tender. Drain.
- Spray a 8x11 baking dish with non stick cooking spray.
- Add drained potatoes, Cream of Chicken Soup and Sour Cream. Mix well in baking dish. Stir in 1/2 cup shredded cheese. Top with remaining cheese.
- Bake at 350 degrees for 25 - 30 minutes.
- Note: I sometimes add cooked, crumbled bacon and or scallions to this dish.

- cook sweet potatoes, peel and mash.
- In a large mixing bowl, blend sweet potatoes, brown sugar, cinnamon, vanilla and a pinch of salt.
- Stir in eggs and milk.
- Pour into a square baking dish.
- Bake at 375°F for 35 minutes.
- Remove from oven.
- Top with pecans and marshmallows and return to oven for 5 minutes or until marshmallows are puffed and browned.
Tips:
- For a creamier casserole, use heavy cream instead of milk.
- Add a crunchy topping by mixing together melted butter, brown sugar, and chopped pecans, then sprinkling it over the casserole before baking.
- If you don't have canned yams, you can use fresh yams. Just peel and boil them until they are tender, then mash them.
