Yield about 15 servings

Number Of Ingredients 5

1 (6 1/2-pound) all-beef bologna
1/2 cup Dijon mustard
1 1/2 cups golden brown sugar
1 loaf sliced white bread
1 jar yellow mustard

Steps:

  • Preheat the oven to 250 degrees F. Line a large roasting pan with foil to cover well.
  • Using a small sharp knife score the top of the bologna, cutting about 1/4-inch deep, to create a diamond design.
  • Place the bologna, cut side down, in the foil lined pan and spread a thin layer of mustard on the exposed areas. Using your hands, press the brown sugar onto the Dijon mustard to create a coating. Carefully turn the bologna over, so that the cut side is facing up, and spread the top and sides with the remaining Dijon mustard. Press the remaining brown sugar onto the mustard to coat the entire bologna well.
  • Place the bologna in the top third of the oven. Bake for 5 hours, rotating the bologna slightly during cooking to keep the bottom from burning.
  • Remove the bologna from the pan and place it on a large platter. Slice the bologna 1/4 to 1/2-inch thick and make sandwiches on fresh white bread with yellow mustard...just the way Emeril likes it!

Tips:

  • Choose the right cabbage: Select a firm, heavy head of cabbage with tightly packed leaves. Avoid any heads that are wilted, bruised, or have signs of decay.
  • Shred the cabbage thinly: Thinly shredded cabbage will cook more evenly and absorb the flavors of the other ingredients better. You can use a sharp knife, a mandoline, or a food processor to shred the cabbage.
  • Cook the cabbage in a hot skillet: A hot skillet will help to caramelize the cabbage and give it a slightly crispy texture. Be sure to stir the cabbage frequently so that it cooks evenly.
  • Add flavorings and seasonings: Emeril's recipe calls for a simple mixture of butter, garlic, salt, and pepper. You can also add other flavorings and seasonings to taste, such as onion, celery, bacon, or caraway seeds.
  • Cook the cabbage until it is tender-crisp: Cabbage should be cooked until it is tender but still has a slight crunch to it. Overcooked cabbage will become mushy and lose its flavor.

Conclusion:

Emeril's favorite cabbage is a simple but flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. Whether you serve it as a side dish or a main course, this dish is sure to please everyone at the table.
