DAIRY-FREE EVAPORATED MILK

Dairy-Free Evaporated Milk image

Use this as a substitute for canned evaporated milk in all your favorite sweets recipes. I have used it in Recipe #101104 and Recipe #78088 both with great success. (the caramel sauce was used to make Recipe #31128 - gorgeous and delish!) no one even suspected that either dish was made with cocnut milk, as the flavor is tempered by the rice milk, allowing the other, stronger flavors to shine.

Time 2h2m

Yield 12 ounces, 1 serving(s)

Number Of Ingredients 2

12 ounces coconut milk
12 ounces rice milk

Steps:

  • shake can of coconut milk well to incorporate the "cream" that solidifies at the top of the can.
  • Combine with the rice milk in a heavy-bottomed pot on medium-high heat. Stirring occasionally, bring to slow boil. turn heat to lowest setting and let simmer, stirring occasionally until liquid has reduced by half. cooking time is very approximate. Measure evaporated milk as needed to ensure it has reduced sufficiently.
  • When finished, pour into a container and allow to cool to room temp before covering and placing in the fridge. Once cooled, the mixture will separate. That is easily remedied by whisking just before use and does not affect taste or outcome.
  • Perfect for making ahead and will keep 2-3 days refridgerated.

Tips:

  • When making evaporated milk at home, ensure to use whole milk for a richer and creamier result.
  • While using store-bought evaporated milk, check the label for any added sugars or preservatives.
  • For dishes requiring a thicker consistency, reduce the evaporated milk further by simmering it gently until it reaches the desired thickness.
  • When substituting evaporated milk for fresh milk in baking, reduce the amount of liquid by about one-third to compensate for its higher solids content.
  • Evaporated milk can be used as a marinade for meats and poultry, adding flavor and moisture.
  • In desserts, evaporated milk can be whipped to create a light and fluffy topping or used as a base for creamy sauces and fillings.

Conclusion:

Evaporated milk is a versatile and nutritious dairy product that can be used in various culinary applications. Its distinct flavor and texture make it a popular ingredient in many recipes worldwide. Whether used as a substitute for fresh milk, a thickening agent, or a key ingredient in desserts, evaporated milk adds richness, creaminess, and depth of flavor to dishes. Experimenting with evaporated milk can unlock a world of culinary possibilities, enhancing the taste and texture of your favorite recipes.
