½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
  • Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

1 ½ pounds ground beef
1 (14 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon onion flakes
1 ½ teaspoons garlic powder, or to taste
1 ½ teaspoons seasoned salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Beat the egg in a mixing bowl, then add the ground beef, tomatoes, and crushed crackers. Season with onion flakes, garlic powder, seasoned salt, and pepper. Mix until evenly combined. Pack into a 9x5 inch loaf pan.

I modified a recipe from Emeril's book "There's a Chef in my Kitchen" on a night when I had little time and less ingredients. The family loved it, so I thought I would share.

2 lbs very lean hamburger
1 tablespoon onion powder
1 teaspoon garlic powder
1/2 teaspoon celery salt
1 tablespoon Old Bay Seasoning
1/4 cup catsup
1/3 cup ranch dressing
2 eggs, slightly beaten
1/2 teaspoon Worcestershire sauce
3/4 cup breadcrumbs
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1/2 cup catsup
2 tablespoons brown sugar

Steps:

  • Mix all ingredients for the meatloaf together, and press into an 8x8 baking pan.
  • Mix together the glaze ingredients, and spread over the top of the meatloaf. Bake for 1 hour at 375 degrees.

This recipe is pretty easy to put together and freezes REALLY well, if it lasts long enough to freeze that is. With just two adults in my house, we usually go through the first loaf the first night I make it. The second loaf is great to warm up for leftovers, or slice and make meatloaf sammies. Yum!

2 pieces toast, cubed
3/4 cup milk or 3/4 cup half-and-half cream
2 lbs lean ground meat (I mix and match using ground dark meat turkey, ground chicken, lamb, or buffalo)
1 ounce soup mix, dry (garlic, herb, onion, etc)
1 small onion, finely chopped
1 tablespoon basil
1 tablespoon thyme
1/2 tablespoon cayenne
2 tablespoons parsley
2 eggs, beaten
1/4-1/2 cup breadcrumbs (optional)
1/3 cup brown sugar
1/2 cup tomato sauce
1 teaspoon Worcestershire sauce

Steps:

  • Don't cut the recipe in half. You'll end up needing the second loaf. . . trust me. :). Soup mix is 1 package of dry soup mix, your choice of flavor. I like the onion soup mix myself.
  • Combine cubed toast and milk or half and half; set aside to soak.
  • Mix ground meat, soup mix, onion, basil, thyme, cayenne and parsley. Use listed amounts or to taste.
  • Mix in bread and milk. The mix should be workable but not too tight.
  • Beat eggs and add to meat mixture. Blend well.
  • Add bread crumbs to consistency desired if needed.
  • Divide mixture between two loaf pans.
  • Make shallow impression down the center of the top of each loaf to keep the topping on.
  • Topping: Mix brown sugar, tomato sauce, and Worcestershire sauce together well. Pour equal amounts of topping over top of each loaf.
  • Bake 60 to 75 minutes at 350 degrees Fahrenheit.

My sons loved meat loaf growing up. While all 3 were teenagers at home I would often double or triple this recipe for one meal. Even the one that hates onions loves this recipe. This recipe is from my mom's Better Homes & Gardens Cookbook (1954).

2/3 cup dry breadcrumbs
1 cup milk
1 1/2 lbs ground chuck
2 eggs, beaten
1/3 cup onion, finely chopped
1 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon ground pepper
1/4 cup brown sugar
1/4 cup catsup
1/4 teaspoon ground nutmeg
1 teaspoon dry mustard

Steps:

  • Soak bread crumbs in milk.
  • Add beaten eggs, seasonings, onion (process in food processor to puree for picky eaters).
  • Mix together well.
  • With hands, gently add ground chuck and mix together lightly.
  • Place in loaf pan sprayed with PAM.
  • Bake in 350º oven 45-50 minutes.

  • *The more you handle the ground beef during the making of meat loaf the tougher it becomes.
  • **Edited - For different texture and taste sautee onion in a bit (1 Tablespoon +/-) of butter. Add 1/2 cup grated carrots (sautee with the onions) for a little extra punch of color and flavor.
